  • 20 oz frozen corn kernels (or 2 15 oz cans canned corn - drained and rinsed)
  • 3 tablespoons unsalted butter
  • 3 tablespoons white sugar (brown sugar can be used for a deeper caramely flavor)
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon fresh or dried thyme (optional)
  • 1/2 teaspoon fresh or dried rosemary (optional)
  • 1/2 cup to 1 cup Parmesan cheese (depends how thick and cheesy you want it)
  • 2 tablespoons cornstarch (or 3 tablespoons all purpose flour)
  • 1 1/4 cups whole milk

How to cook:
  1. Prepare the Corn:
  2. If using frozen corn, thaw it. To speed this up, place the bag with corn in a deep casserole dish under running warm water. Open the corn bag and drain any excess of water from the corn, using a colander.
  3. If using canned corn, drain it.
  4. Cook:
  5. Place a large skillet or cast iron pan over medium heat, once hot add the butter and melt it.
  6. Once the butter has been melted, add the corn kernels, sugar, cream, salt, pepper and herbs if using. Stir to combine and bring to a simmer. Cook the mixture for 3 minutes.
  7. Cornstarch Mix:
  8. In a medium bowl combine milk with cornstarch (or flour) and whisk until fully combined.
  9. Add the mixture to the pan and stir to combine. Continue to cook stirring until the mixture has thicker and the corn is cooked and tender, about 5-7 minutes.
  10. If the mixture is too thick, add more milk or cream, 1/4 cup at a time.
  11. If the mixture is too thin, mix another 1 tablespoon of cornstarch with 2 tablespoons of water until fully dissolved and add the mixture to the pan. Stir and bring to a simmer. Keep in mind that the mixture will thicken more as it cools.
  12. Add cheese:
  13. Remove from heat and stir in the shredded parmesan cheese. Stir until fully combined and creamy. Keep in mind that the mixture will thicken more as it cools.

How to cook:
  1. Heat the butter in a large skillet over medium high heat.
  2. Add the onion to the pan and cook for 3-4 minutes until softened.

  • 2 bags Frozen Spinach (about 20 ounces) see notes if using fresh
  • 4 Slices regular thickness bacon
  • 1 small onion, minced fine
  • 2 cloves garlic, zested or minced very fine
  • 2 Tablespoons All Purpose Flour
  • 1 Teaspoon Lawry's Seasoned Salt (or table salt)

How to cook:
  1. Thaw spinach and squeeze out all water. Then chop finely and set aside.
  2. In a small skillet or saucepan that is large enough to eventually hold the spinach and the milk mixture, you'll turn the heat to medium-high. Saute bacon until crisp. Once crisp, remove the bacon to a side plate to cool, then chop finely and set aside. Save the bacon fat in the skillet.
  3. In the pan with the bacon fat add the onions and garlic and saute until the onion is translucent about 5 minutes. Then add the flour, seasoned salt, pepper and nutmeg. Using a whisk stir until well combined.
  4. Once combined, slowly add the milk in while continuously whisking to eliminate lumps. Once all of the milk is in you'll continue to cook until the milk mixture starts to thicken. About 7-9 minutes. You can increase the heat to high, but you must stay right with the pan, and if the milk starts to bubble to high, reduce the heat a little to stop the milk from boiling over.
  5. Once the milk is thickened add back in the chopped spinach and bacon and stir to combine. Heat for 3-5 minutes to reheat the spinach.
  6. Serve immediately.
