  • 125 g butter
  • 395 g sweetened condensed milk (see notes)
  • 50 g golden syrup
  • 220 g brown sugar
  • 200 g white chocolate

How to cook:
  1. Line a 28cm x 18cm slice tin with baking paper - ensure you leave some baking paper hanging over the edges to help you remove the fudge from the tin once it’s set.
  2. Break the white chocolate into pieces and place into your Thermomix bowl. Chop for 5 seconds, Speed 7. Transfer to a bowl and set aside until needed.
  3. Place the butter, golden syrup, sweetened condensed milk and brown sugar into your Thermomix bowl and cook for 8 minutes, 100 degrees, Speed 3 (with the measuring cup OFF).
  4. Scrape the sides of your Thermomix bowl and cook for a further 20 minutes, Varoma temperature, Speed 3 (with the measuring cup OFF).
  5. Add the chopped white chocolate and mix for 10 seconds, Speed 4 or until it’s melted and the mixture is smooth.
  6. Working quickly, transfer the fudge to your prepared tin and smooth the surface.
  7. Place the fudge into the fridge for 6 hours (preferably overnight) to set before cutting into pieces.

  • 395 g sweetened condensed milk
  • 500 g brown sugar (soft brown sugar (not granulated brown sugar))

  4. Stir through the sea salt and white chocolate melts.
  5. Pour the fudge into the prepared tin and sprinkle over the extra sea salt.
  6. Place into the fridge to set for 2 hours before cutting into pieces.

  • 125 g unsalted butter ((room temperature))
  • 250 g packed brown sugar ((dark or normal is fine))
  • 125 g thickened cream ((not light cream))
  • ¼-½ tsp salt ((depending on how salty you like your sauce))
How to cook:
  1. Place all ingredients into the Thermomix bowl.
  2. Cook for 6-9 minutes, Varoma, Speed 2, MC off. At the 6 minute mark, check the consistency and cook for a further 2-3 minutes if you'd like your sauce to be thicker.
  3. Please note: sauce will thicken further on cooling.
