Tilapia with Seafood Stuffing Recipe

Ingredients:
  • 4 tilapia fillets, approximately 1 1/2 to 2 lbs.
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • paprika
  • 1/2 cup finely chopped celery
  • 1/4 cup grated onion
  • 1/4 cup olive oil
  • 1 teaspoon paprika, divided
  • 1/2 teaspoon salt
  • 3 cups cooked rice
  • 1/3 cup sour cream
  • 1 cup chopped imitation crab meat
How to cook:
  1. Wash the fish fillets and pat dry. Coat the bottom of a baking pan with the 2 tablespoons of olive oil and set aside. Pour the 1/4 cup olive oil into a medium frying pan and place it over medium high heat until it is hot. Add the celery and onions. Cook until tender. Remove from the heat and add the paprika, salt, rice, sour cream, and crab meat. When this mixture is evenly mixed, lay the fish fillets out flat on a work surface. Add 1/4 of the mixture to the center of each fillet. Roll the fillets up so the stuffing is in the middle and place the fillet in the baking pan. When all the fillets are stuffed, sprinkle them with the 1/2 tsp. of salt, 1/4 tsp. of pepper, and the paprika. Cover with foil and place them in an oven that is preheated to 350°F. and cook for 30 to 45 or until the filets meat is white and flaky.

Ingredients:
  • 6 Regal Springs Tilapia fillets
  • ¾ cup whole wheat breadcrumbs
  • ½ cup parmesan cheese (grated)
  • ¼ cup slivered almonds
  • 2 tsp fresh thyme
  • 2 tsp fresh sage (finely chopped)
  • 1 tsp dried minced onion
  • ½ tsp garlic powder
  • ½ tsp celery salt
  • 1 tsp salt
  • Pepper (to taste)
  • Olive oil spray (sub any cooking spray)
Nutrition:

How to cook:
  1. Preheat oven to 425°.
  2. Lay the Tilapia fillets flat on a baking sheet lined with parchment paper.
  3. In a medium shallow bowl, combine breadcrumbs, parmesan cheese, almonds, thyme, sage, minced onion, garlic powder, celery salt, salt and pepper. Mix until well combined.
  4. Sprinkle breading over each Tilapia fillet until well coated. Generously spray olive oil cooking spray over Tilapia.
  5. Gently flip each Tilapia over and repeat the breading process.
  6. Bake for 8–12 minutes or until the thickest part of the Tilapia is white and flaky, and the breading has browned.

This is a low sodium, low fat, heart healthy favorite.

How to cook:
  1. Rinse tilapia, pat dry and cut in half down the spine. Sprinkle with lemon pepper, set aside. Prepare stuffing. Sauté onions and celery in 1 Tab olive oil until tender. Place bread cubes in bowl and mix in onion mixture, add garlic, sprinkle some more lemon pepper over top, pepper to taste and add enough chicken broth to moisten cubes. Add parsley and mix thoroughly. Spray 9 x 13 baking pan with cooking spray. Place ½ of each tilapia in the pan. Cover with a scoop of stuffing mix, (I use about a hand full), cover with other ½ of tilapia. Sprinkle with lemon pepper and sprinkle fish fry coating on top. Sprinkle a little paprika for color. Sprinkle squeezed fresh lemon over top of fish. I use a convection oven for this. You can use a conventional oven set at 350.F. Pre Set Convection oven at 325F. When ready bake for 7-10 min uncovered. Cover with aluminum foil and bake for 5-10 min until fish is cooked through and flaky. Times can vary depending on oven and size of fish. Do not let fish dry out while uncovered. Prepackaged stuffing mix can be used as well if you are not concerned about the salt content.
