- 1 cup ham, diced
- 1 cup cottage cheese
- 1 cup cheddar cheese, shredded
- 4 green onions, sliced
- 1/4 cup pickled jalapeno peppers, sliced (optional)

Ingredients:
- 8 eggs (large size preferred)
- 1/2 cup of either cottage cheese or ricotta cheese (take your pick, both work well!)
- 1/2 tbs of melted butter
- Salt and pepper to taste
- 1/2 cup of added toppings (you can add in meats or vegetables of your choice to the egg bake)*
- 1/3 cup of grated cheese (add in different cheeses, such as cheddar, to the egg casserole recipe for an extra cheesy dish)

- Begin our easy breakfast casserole recipe by preheating your oven to 375°F.
- While it's preheating, line your baking dish with a thick layer of butter.
- Break all of your eggs into a large mixing bowl.
- Add in your cheese, melted butter, and salt and pepper.
- Whisk all the ingredients vigorously until everything is mixed together. It's important to whisk well if you are looking for a fluffy breakfast casserole!
- By now your oven should be preheated, so take your breakfast casserole mixture and gently pour it into your already buttered baking dish.
- At this stage, if you're adding in any extra meats or vegetables, you need to put them into the mixture.*
- You can round off the breakfast casserole by grating extra cheese over the top of the mixture.
- Place the egg casserole into the oven and leave it to bake for at least 25 min. You can add some more grated cheese to the top near the end of the cooking time if you want it to be nicely browned off and oozing with cheesy goodness!
- Serve your breakfast casserole piping hot to the family!
