  • 3 large eggs
  • 75 g plain flour
  • 150 ml milk (or milk/ale mixture in a ratio of 2:1 or 1:1)
  • Salt and Pepper
  • 400 g sausages (4-6 sausages depending on size)
  • 1 tbsp dripping/duck fat or oil
  • 1 portion batter (as above)

How to cook:
  1. Batter
  2. Season the flour and sift into a medium sized mixing bowl
  3. Make a well in the middle of the flour and break an egg into it
  4. Use a balloon whisk to beat the egg up and draw in the flour
  5. Add the remaining eggs one by one, whisking till the flour is fully incorporated and you have a thick paste
  6. Gradually whisk in the milk or milk and ale mixture
  7. Cover and put in the fridge for at least thirty minutes, preferably 2 hours to 24 hours.
  8. Toad in the Hole
  9. Heat the oven to 180C (170c Fan Oven)
  10. Melt the fat in the pan you will be using for the Toad in the Hole and add the sausages, pricking them all over
  11. Bake the sausages for 15 minutes, turning regularly
  12. Turn the oven up to 230c (220c fan oven)
  13. Remove the sausages from the pan and put to one side
  14. Heat the pan with the fat in it till there is just a trace of smoke rising from the pan
  15. Pour in all the batter and quickly place the sausages in the batter
  16. Put the dish in the oven and do not open the door for at least 15 minutes
  17. Check after 15 minutes, ideally keeping the door shut. The batter should have puffed up and started to turn golden
  18. Continue to cook for a total of around 25 minutes till the batter is golden and crunchy
  19. Serve with onion gravy and a simple green vegetable

  • 6 good quality chipolata sausages
  • 1 small egg
  • 1 tablespoon oil
  • 1 small onion, sliced into rings
  • 25 g plain flour
  • 2 tablespoons milk
  • 1/2 teaspoon mixed herbs
  • salt & freshly ground black pepper

How to cook:
  1. Heat the oil, first of all, in a heavy 18cm frying-pan then over a medium heat fry the chipolatas and onion rings togrether for about 10 minutes. Meanwhile preheat the grill and make up the batter.
  2. To do this you sieve the flour into a bowl, make a well in the centre and break the egg into it. Now whisk the egg gradually incorporating the flour and finally whisk in the milk, until you have a smooth lump-free batter (you may need to stir round the edge of the bowl and have another whisk to make sure it's all blended). Then season with salt and pepper, and whisk in the herbs.
  3. By this time the chipolatas will be ready, so increase the heat to its hightest setting, and when it is very hot pour in the batter all round the chipolatas. Then leave it, without stirring or anything, for 1 or 2 minutes or until it looks on the point of bubbling up slightly here and there.
  4. It will look a total disaster at this stage, but all is well. Just transfer the pan to sit under the grill (allowing room for the batter to rise) and let it finish cooking for about 6-10 minutes, or until it has become beautifully puffy and very crisp and brown. Now serve immediately-it will shrink somewhat but remain light and crisp.

  • 9-12 pork sausages or chipolatas
  • 2 tbsp oil
  • 75 g plain flour
  • 2 eggs
  • 150 ml milk

How to cook:
  1. Make the batter
  2. Measure the flour out and add it to a mixing bowl. Crack the eggs into a separate bowl just in case any shell goes in. Measure the milk out.
  3. Make a well in the centre of your flour then tip the eggs in. Using a fork or a small whisk, whisk them into the flour. Then slowly start adding the milk, whisking it all together until you have a nice smooth batter.
  4. Once you've made your batter, pop it into a jug if you have one. Keep it in the fridge until you need it later.
  5. Bake the sausages
  6. Preheat your oven to 200C / 190C Fan / 390 F and grease/oil the base and sides of a roasting tin with a little oil.
  7. Arrange the sausages in your roasting pan then put them in the oven for 25 minutes.
  8. Make the toad in the hole
  9. Carefully remove your roasting pan from the oven. If your sausages are very fatty, drain a little of the oil if necessary. Turn the sausages over at this point so the other side can brown.Pour the toad in the hole batter around the sausages.
  10. Put the toad in the hole back into the oven and bake for a further 30-40 minutes. It's ready when the sausages have cooked and the batter has risen, crisped up and turned a lovely golden colour.
  11. Remove from the oven and serve with your favourite vegetables.
