  • 1 lb. tortellini pasta (cooked until tender and drained under cool water.)
  • 1 ½ cups thick sliced english cucumber
  • 1 red bell pepper (seeded and chopped)
  • 1 6oz can black olives, sliced and drained
  • 1/2 cup diced purple onion
  • 1 cup sliced salami (chopped)
  • 8 oz cheddar cheese (cubed)
  • 1 cup Italian Salad Dressing

How to cook:
  1. Combine the cooked tortellini pasta, cucumber, bell pepper, olives, onion, salami and cubed cheese in a large bowl.

  • 1 package(s) cheese tortellini
  • 1 stick(s) pepperoni or (1 pkg) mini pepperoni pieces
  • 1 stick(s) imported italian salami
  • 1 can(s) sliced black olives
  • 1 can(s) sliced green olives
  • 1 jar(s) roasted red peppers
  • 1 package(s) shredded carrots
  • 3 - stalks of green onions
  • 1 package(s) crumbled blue cheese
  • 1 pint(s) grape tomatoes
  • FOR VINAIGRETTE DRESSINGS
  • 1/3 cup(s) olive oil, extra virgin
  • 2 tablespoon(s) white wine vinegar
  • 1 teaspoon(s) chopped garlic
  • - salt & pepper to taste
  • 1/4-1/2 teaspoon(s) red pepper flakes
  • OPTIONAL

How to cook:
  1. For Vinaigrette Dressing: whisk all ingredients and add salt & pepper to taste, set aside
  2. Cook tortellinis in salted water for only a few minutes, DO NOT OVERCOOK, make al dente or even a little harder, drain and set aside
  3. Cut meats into small cubes and vegetables; put all into serving bowl
  4. Add tortellini to meats & veggies
  5. Add cheese
  6. Pour vinaigrette dressing over items in bowl and spoon till well mixed
  7. Refrigerate overnight

How to cook:
  1. Cook the tortellini to al dente, according to package instructions. Drain and rinse with cold water. Place the tortellini in a large bowl.
  2. Add the tomatoes, olives, red bell pepper, onion, salami, pepperoncini, Parmesan cheese, and basil. Drizzle with desired amount of dressing and toss well. Season with salt and pepper, to taste. Serve at room temperature or chilled. You can garnish with extra basil and Parmesan cheese, if desired.

  • 1 Recipe Italian Dressing
  • 1 20 oz. bag refrigerated cheese tortellini
  • 1 cucumber (peeled, sliced and quartered)
  • 1 pint cherry tomatoes (halved)
  • 1 6 oz.can black olives (drained and halved)
  • 1 orange bell pepper (chopped)
  • 2 tablespoons chopped pepperoncini
  • 8 oz. fresh mozzarella balls (quartered)
  • 8 oz. sliced salami (chopped)
  • Optional: feta cheese, Parmesan, parsley
How to cook:
  1. Prepare Italian Dressing according to directions. Refrigerate until ready to use then shake or whisk to recombine before using.
  2. Cook tortellini in salted water according to package directions. Rinse with cool water, drain and add to a large serving bowl. Pour half of the dressing over the warm pasta and toss to combine. Add the remaining salad ingredients to the tortellini.
  3. If serving within the hour: toss with desired amount of remaining dressing. Although you can serve salad immediately, I highly recommend refrigerating for at least 30 minutes for the flavors to meld and salad to chill.
  4. If serving later: Gently toss ingredients to combine but do NOT add remaining dressing yet. Cover and refrigerate. When you are ready to serve, toss with desired amount of remaining dressing. This salad is excellent the next day.
