Ingredients:
  • 1 tablespoon olive oil
  • ½ small onion {finely chopped}
  • 2 teaspoons garlic {minced}
  • 1 pound Italian sausage
  • 4 cups chicken stock {or vegetable}
  • 1-24 ounce jar marinara sauce
  • 1-14.5 ounce can diced tomatoes
  • 1 ½ teaspoons Italian seasoning
  • 1-8 ounce package cream cheese {cut into cubes}
  • 15 ounces tortellini
  • 1/2 cup Parmesan cheese {grated}
  • 10-12 leaves fresh basil {cut into thin strips}
How to cook:
  1. In a large skillet, add olive oil over medium heat. Once the oil is heated, add the onion and cook until translucent. Add garlic and continue to cook until fragrant {about 30 seconds}. Add Italian sausage to onion and garlic, cook until the sausage is no longer pink {if there is significant grease be sure to drain}. Transfer to crock pot that is lined with a crock pot liner.
  2. Add chicken {or vegetable} broth, marinara, diced tomatoes and Italian seasoning to meat in crock pot. Stir, cover and cook on low for 6-8 hours or on high for 4-6 hours.
  3. The last 30 minutes of cooking add cubed cream cheese and tortellini to soup. Stir well and continue to cook for the remaining 30 minutes.
  4. To serve, ladle the soup into bowls and top with grated parmesan cheese and fresh basil. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.

How to cook:
  1. Brown sausage in large pot.
  2. Drain sausage and return to pot.
  3. Add the 4 cups of tomato broth or chicken broth, the undrained tomatoes, and the spices.
  4. Bring to a boil.
  5. Turn heat down to medium and allow covered pot to simmer for about 10 minutes.
  6. Add the chunked cream cheese to the pot and stir until the cheese is mostly melted and blended.
  7. Cover the pot and cook for 10 minutes.
  8. Add the tortellini and allow the soup to cook, uncovered, for about 5 to 7 minutes or until the tortellini begins to bob around the top of the pot. Add the two cups of fresh spinach and allow to cook for 2 minutes longer.
  9. Serve with crackers or cornbread.

How to cook:
  1. Add the broth to the slow cooker and whisk in the flour until dissolved. Add the spices, onion, garlic, tomatoes, tomato paste and stir until incorporated. Cook on LOW for 4-5 hours or on HIGH for 2-3 hours. Add the frozen cheese tortellini and cook on HIGH for another 15-20 minutes or until the tortellini are done. Add the shredded Cheddar cheese, spinach, cream, cream cheese and and stir until the cheese is melted, then continue to cook for another 5 minutes or until the spinach is wilted. Add salt and pepper to taste.
  2. Serve sprinkled with some freshly grated Parmesan cheese.
Notes: Crock Pot Spinach Tortellini Soup, Place all ingredients in the crock pot, minus the tortellini. Make sure cream cheese is cut up in 1 inch cubes before placing in crock pot.

How to cook:
  1. Brown and crumble sausage until cooked through on the stovetop. Place cooked sausage in the slow cooker.

  4. 20 minutes before serving, turn heat to high if it isn't already and stir in frozen tortellini and spinach. Cover and cook for 15 minutes or until tender and hot.
  5. Serve topped with parmesan cheese.
