  • 2.5 lbs. bone-in, skin-on chicken thighs
  • 3 Tbsp. olive oil
  • 3 Tbsp. lemon juice
  • 1 tsp. Dijon mustard
  • 1 and 1/2 tsp. sea salt
  • 1/2 tsp. dried thyme
  • 1/2 tsp. paprika (I love smoked paprika)

How to cook:
  1. Add the chicken thighs to a zip-top bag or bowl with a lid.
  2. Whisk together the remaining ingredients to make the marinade.
  3. Pour the marinade over the chicken and allow it to marinate in the fridge for at least 1 hour and up to 4 hours.
  4. When you’re ready to grill, pull the chicken from the fridge and let it come to room temperature for about 20 minutes while you preheat the grill. This is safe to do and ensures even cooking.
  5. Preheat your Traeger or wood pellet grill to 450F.
  6. Remove the chicken from the marinade and place it skin side down on the grill. Don’t rinse or wipe off the marinade.

How to cook:
  1. Step 1
  2. When ready to cook, set the Traeger temperature to 350℉ and preheat with the lid closed for 15 minutes.

  4. While the grill is heating, trim any excess fat and skin from the chicken thighs. Season lightly with salt and pepper, then with the Traeger Chicken Rub.

  • (1/2 lb each) bone-in, skin-on chicken thighs
  • cups low-sodium chicken broth
  • Pork & Poultry Rub
  • (3 sticks) unsalted butter, melted
  • Traeger Apricot BBQ Sauce, warmed
How to cook:
  1. Step 1
  2. Peel the skin off the chicken thighs and reserve. With kitchen shears, remove the fat on each side of the chicken thighs. Trim 1/4 inch off the bottom and top bone knuckle of each thigh so the thighs are uniform in size. Trim the reserved skin to fit the new size of the thighs, then place the skin back on the thighs.
