  • 200g penne pasta
  • 500g (6 cups) broccoli florets
  • spray oil
  • 2 tablespoons reduced-fat spread
  • ¼ cup flour
  • 1 clove garlic, crushed
  • pinch dried red chilli flakes
  • 2 cups skim milk
  • 185g can tuna in spring water, drained, flaked
  • 2 tablespoons sliced oil-free sun-dried tomatoes
  • ½ cup grated mozzarella cheese
  • ¼ cup fresh basil (optional)
  • 4 cups baby rocket, with 4 tablespoons balsamic dressing (made with 2 parts balsamic vinegar to 1 part olive oil)

How to cook:
  1. 1 Cook pasta in a medium-sized saucepan following packet directions. Add broccoli in the last 3-4 minutes of cooking. Drain. Preheat grill to high. Spray a 6-cup-capacity ovenproof baking dish with oil.
  2. 2 Melt spread in a large saucepan over a medium heat. Add flour, garlic and chilli flakes. Stir until mixture thickens and bubbles.
  3. 3 Remove from heat and gradually whisk in milk. Return to heat and cook, stirring, for 5 minutes or until thickened. Remove from heat.
  4. 4 Add tuna and tomatoes to pan, then stir in pasta and broccoli. Spoon mixture into prepared baking dish and sprinkle with mozzarella. Grill for 4-5 minutes or until cheese has browned and melted. Top with basil (if using) and serve with rocket and dressing.

How to cook:
  1. Heat oven to 350°F. Cook and drain pasta as directed on package, using minimum cook time. In ungreased 1 1/2-quart casserole, stir together soup, milk, tuna, mushrooms and cooked pasta.
  2. Cover; bake 20 minutes. Remove casserole from oven. Cut up large pieces of broccoli; gently stir broccoli into tuna mixture. In small bowl, mix butter, bread crumbs and almonds; sprinkle over casserole. Bake about 30 minutes longer or until bubbly around edges.

How to cook:

  • 1 pound pasta large shells ((reserve 1 cup of the cooking liquid before draining!))
  • 1 teaspoon kosher salt (added to the boiling water)
  • 3 cups broccoli ((fresh or frozen) chopped small)
  • ½ cup frozen peas
  • 1 cup ricotta cheese
  • ½ cup Parmesan Cheese (shredded)
  • ½ cup cream
  • 12 oz can tuna, drained ((preferably solid, not chunk - break it up with a fork))
  • ½ teaspoon kosher salt
  • 6 grinds fresh black pepper
  • 1 cup white cheddar (shredded (or sub regular cheddar, provolone, or mozzarella))
  • 2 cups corn flakes cereal (mixed with 1 T melted butter)
How to cook:
  1. Preheat oven to 400°. In a large pot, boil water and then add 1 teaspoon of salt. Cook pasta shells according to package instructions, about 10 minutes. In the final 3 minutes of cooking, add the chopped broccoli to boil with the pasta. So the pasta will cook 7 minutes by itself and then 3 more minutes together with the broccoli for a total of 10 minutes and finish at the same time.
  2. Reserve 1 cup of the cooking liquid (a coffee cup works great to scoop it out and add to a measuring cup). Drain the pasta and broccoli and return to the pot. Add in the cooking liquid, peas, ricotta and Parmesan cheese, cream, and tuna. Sprinkle with the salt and pepper and then mix very well with a spoon or spatula to combine.
  3. You can bake it in the same pot, or transfer it to a 9x12 or round casserole dish. Top it with shredded cheddar cheese, then with the buttered cornflakes. Bake for 15 to 20 minutes, until the casserole is warmed through and the flakes are browned a bit. Allow to sit a few minutes before serving.
