  • 10 ounces dry pasta shells (or use rotini, fusilli, or whatever pasta you’d like)
  • 3 tablespoons butter, divided
  • 1 white onion, diced
  • 8 ounces baby bella mushrooms, sliced
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1/4 cup all purpose flour (or whole wheat flour or all purpose gluten free flour)
  • 1 3/4 cup unsweetened almond milk (or cashew milk or regular milk)
  • ½ teaspoon garlic powder
  • 1/2 cup grated parmesan cheese
  • 2 (5 ounce) cans tuna, drained
  • 1 cup frozen peas
  • Salt and pepper, to taste
  • For the topping:
  • 1/2 cup breadcrumbs, gluten free if desired
  • 1 tablespoon butter

How to cook:
  1. Preheat your oven to 350 degrees Spray a 2-quart baking dish or 9x9 inch baking pan with nonstick cooking spray, or grease with olive oil or butter.
  2. First boil the noodles until al dente, according to the directions on the package. Once done cooking, drain and set aside.
  3. Cook your mushrooms: Place a large pot over medium-high heat and add in 1 tablespoon butter. Once butter melts, add in the mushrooms, onions, thyme and salt and pepper. Stir occasionally until mushrooms and onions are cooked down about 4-6 minutes. Transfer to a bowl.
  4. In the same skillet you cooked mushrooms, add in 2 tablespoons of butter and place over medium heat. Once butter is melted, whisk in a little bit of the flour and then slowly add in milk, a little bit at a time, alternating with the flour and vigorously whisking away any lumps. Bring mixture to a boil, then reduce heat and simmer for a few minutes stirring every so often, until the sauce thickens up. If it gets too thick, add in ¼ cup more milk.
  5. Once thick, turn off the heat and stir in garlic powder, parmesan cheese. salt and LOTS of freshly ground black pepper.
  6. Stir in cooked noodles, mushroom and onion mixture, drained tuna and peas. Season again with salt and pepper, to taste. Pour mixture into your prepared baking pan.
  7. In a small bowl, mix breadcrumbs with melted butter. Sprinkle breadcrumb mixture on top of casserole and bake for 20-30 minutes. Serves 6.

How to cook:
  1. Add the pasta to a pan of boiling water and cook for a few minutes less than the packet instructions - so around 7-9 minutes.
  2. Meanwhile, heat a little oil in a pan and gently cook the mushrooms until softened - about 5 minutes.
  3. Make the cheese sauce. Preheat your oven to 180°C/400°F/Gas 6.
  4. Drain the pasta and pour in the cheese sauce. Add the tuna, sweetcorn and cooked mushrooms. Mix well.
  5. Transfer the pasta to a baking dish. Sprinkle over the grated cheddar. Put in the oven for 15-20 minutes until the cheese on top is golden and starting to brown. Serve with chopped parsley.

  • 3 cups small pasta shape, dry ((I used rigatoni!))
  • 1/4 cup olive oil ((divided))
  • 4 cloves garlic, minced
  • Optional: 1 small onion, diced
  • 1 large bell pepper, cored + chopped
  • 1 cup carrots, chopped ((approx. 2-4 carrots, depending on size))

How to cook:

  5. Stir in spinach until wilted, about 2 minutes. Then, stir in canned tuna and tomato sauce. Season generously with salt and pepper. Remove from heat.
  6. Transfer cooked vegetable and tuna mixture to a large baking dish. Add pasta, remaining 2 Tbsp of olive oil, and stir everything together until well-combined.
  7. Spread pasta mixture in an even layer in the baking dish. Try to have more of the pasta exposed on the top, so that it gets nice and crisp! Sprinkle cheddar cheese overtop of everything in an even layer.
  8. Transfer baking dish to the oven. Bake for 15 minutes, until cheese is melted and slightly browned.
  9. Remove from oven, add fresh herbs to garnish (if desired), and serve hot!

How to cook:
  1. Preheat oven to 180°C – Grill
  2. Start by adding the rigatoni to salted boiling water, timer set to 2 minutes minus the packet time.
  3. Next, add the onions and olive oil to the pan on a low/medium heat. Gently fry for around 5 minutes until softened (not caramelised). Add the garlic in for a couple minutes to fry once softened.
  4. Then, add the drained tuna, cream cheese, cheddar and two ladles of pasta water. Stir until the cheese melts and a creamy sauce is achieved. Add extra pasta water as necessary.
  5. Stir the lemon juice and dijon mustard into the sauce and season with salt and lots of pepper. Pour the rigatoni, sweetcorn and creamy tuna sauce into a baking dish (around 12 inch x 10 inch). Stir to incorporate everything and top with the remaining cheddar. Pop under the grill for 10 minutes, or until the cheese is golden brown and crispy.
  6. Top with fresh parsley to serve.
