Tuna Vol-Au-Vents
This simple tuna casserole in one of the fillings that I put in vol-au-vents. You can just about fill it with any type of casserole of your choice.

Ingredients:
  • 1 (6 ounce) can tuna, drained
  • 1 onion, finely chopped
  • 2 tablespoons butter
  • 3 tablespoons plain flour
  • 600 ml milk
  • salt and pepper
  • 1 1/2 tablespoons curry powder
  • 1/2 cup corn kernel
  • 1/2 cup grated cheese
  • 4 large vol-au-vent cases

How to cook:
  1. Heat butter in a saucepan and add onion and saute for a few minutes until soft.
  2. Add tuna and cook for a further 3 minutes.
  3. Mix flour into tuna mixture and cook stirring at all times for a another minute.
  4. Add milk, salt and pepper to taste, curry powder and corn and stir until thick.
  5. Simmer on low for about 5 minutes.
  6. Place vol-au-vents on a baking tray and pour tuna mixture in each one.
  7. Sprinkle with cheese and place in a moderate oven until cheese is melted.

Vol au Vents... What an '80s kinda meal! These are so easy to whip up and have alongside salad. They may just become part of your weekly menu! As an alternative, this tuna sauce is delicious stirred through pasta as well. If you would prefer a vegetarian option, use the base of the sauce from Step 3 but replace the tuna with your favourite vegetables. How to cook:
  1. Preheat oven to 180C and line a baking tray, and place cases onto paper.
  2. Add milk (400g), butter (50g), flour (50g), garlic (1 tsp), onion (1 Tbsp), nutmeg (pinch) and parsley (1 Tbsp) to bowl. Program 9 minutes / 90C / Speed 4.
  3. Add drained tuna (from 425g tin) and corn. Stirring Speed / 30 seconds.
  4. Spoon mixture into vol au vent cases.
  5. Bake for 15 minutes or until corn and cases are warmed through.
  6. Serve with salad or steamed vegetables.

Ingredients:
  • 1 pack frozen puff pastry dough ( around 250g )
  • 1 can tuna in brine
  • ½ tsp chili powder ( more if you like it spicier )
  • 1 small red onion, diced finely
  • 1 small stalk parsely, chopped finely
  • 2 tbsp tomato ketchup
  • a dash of black pepper
  • a pinch of salt
  • 1 egg- mixed with 2 tbsp water for egg wash
How to cook:
  1. Preheat the oven to 200 C.
  2. Thaw the frozen pastry on kitchen counter until it is more malleable to rolling.
  3. Roll it out to ½ inch thickness and cut out circles.
  4. Pair 2 circles together.
  5. Punch out smaller hole in one of the 2 circles then stack this on top of the base.
  6. Brush with egg wash then bake for 18 to 20 minutes until golden.
  7. Prepare the filling.
  8. In a bowl, combine the tuna with chili powder, onion, parsley, tomato ketchup, black pepper and salt.
  9. Once the vol au vents are ready, fill the tuna in the middle then serve warm.
