Ingredients:
  • Nonstick cooking spray, for the pan
  • 1 1/2 cups regular oats
  • 1 cup whole milk
  • 2 1/2 pounds ground turkey
  • 4 slices bacon, cut into very small bits
  • 3 tablespoons finely minced fresh parsley, plus more for serving
  • 1/2 teaspoon seasoned salt, such as Lawry's
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon red pepper flakes
  • 1 cup ketchup, plus more if needed
How to cook:
  1. Preheat the oven to 350 degrees F. Generously coat 18 standard muffin cups (from two 12-cup muffin pans) with cooking spray.
  2. Put the oats in a small bowl and slowly pour the milk over them. Stir to make sure the oats are all coated and then let them sit for a few minutes.
  3. Put the turkey and bacon in a separate large bowl and add the oats and any extra milk from the bowl to it. Add the parsley, seasoned salt, black pepper, red pepper flakes and 1/4 cup of the ketchup. Use your hands to mix it all together. Place a 1/4-cup scoop of the mixture in each greased muffin cup. Squirt about 1/2 teaspoon of the remaining ketchup on top of each meatloaf. Use a spoon to smear the ketchup evenly over the top, then use it to nudge the edges of the meatloaves away from the pan a bit (this just neatens them up a little).
  4. Bake for 25 minutes, then carefully squirt another 1/2 teaspoon of ketchup on top of each, spreading it carefully with a spoon to cover as much of the surface as possible. Continue to bake until completely cooked through and sizzling around the edges, about another 30 minutes. If there are any large areas without ketchup, go ahead and squirt/spread more as needed.
  5. Sprinkle the meatloaves with parsley, then let them sit in the pan for 5 to 7 minutes before serving. Run a sharp knife around the edges of the loaves to loosen them if they stick. Serve them warm with a veggie on the side

Ingredients:
  • 1 pound ground turkey or ground beef
  • 1/3 cup breadcrumbs or oatmeal (Either works, but I now use oatmeal)
  • 1/3 cup Parmesan cheese
  • 1 egg
  • 1 (8 ounce) can tomato sauce (Instead of the tomato sauce, I often substitute with around 1/4 cup of ketchup in the meat mixture and at least another 1/4 cup for the top. Personal choice to use the ketchup vs tomato sauce I do prefer the taste of ketchup – must be the added sugar.)
  • 1/2 teaspoon garlic powder
  • Salt and pepper
  • several shakes of Worcestershire sauce (about a teaspoon)
  • A couple of handfuls of whatever other veggies you have on hand… (onions, mushrooms, zucchini, broccoli, carrots, spinach, lentils…)

How to cook:
  1. Preheat oven to 350 degrees.
  2. Mix all the ingredients together in a bowl, but only use about ¼ of the tomato sauce/ketchup in the meat mixture. Reserve the rest for the tops of the meatloaf muffins.
  3. Press the meat into the muffin cups (you should be able to get eight to 10 out of this amount of meat).
  4. Top with a dollop of tomato sauce/ketchup on each one.
  5. Cook for 30-35 minutes.
  6. Serve two per person.

How to cook:
  1. Preheat the oven to 350 degrees.
  2. Add the bread to a large bowl and pour the milk on top of the slices. Let them soak for 5 minutes.
  3. Add the remaining meatloaf ingredients and use your hands to combine. Try to ensure that the bread is sufficiently combined into the mixture, although try not to overmix as the ground beef will become tougher and lose some flavor.
  4. Form the meat into a loaf, (about 5 inches wide), and place it over a broiler pan to allow the fat to drain. Lining the bottom of the broiler pan with foil will make for easier cleanup.
  5. Line the bacon over the top of the loaf and carefully tuck the ends under the bottom. The bacon can be used to help support the shape of the loaf. I like to line them so that they are touching, but not overlapping so that you can easily slice in between each piece of bacon when it’s cooked.
  6. Combine the sauce ingredients and brush 1/3 of it over the meatloaf.
  7. Bake the meatloaf for 45 minutes on the middle rack. Remove it from the oven and brush another 1/3 of the sauce over it. Bake for another 25 minutes.
  8. Remove from the oven and let it sit for 10 minutes prior to slicing, letting it rest allows the juices to absorb back into the meat, cutting in too early will cause the juice to run out of the loaf.
  9. Serve with the remaining sauce and enjoy! These are delicious with mashed potatoes and roasted green beans!

  • For the Meatloaf:
  • 1 c. whole milk
  • 6 slices white bread
  • 2 lb. ground beef
  • 1 c. (heaping) freshly grated Parmesan cheese
  • 1/4 tsp. seasoned salt
  • 3/4 tsp. salt
  • Freshly ground black pepper
  • 1/3 c. minced flat-leaf parsley
  • 4 whole eggs, beaten
  • 10 slices thin/regular bacon
  • For the Sauce:
  • 1 1/2 c. ketchup
  • 1/3 c. brown sugar
  • 1 tsp. dry mustard
  • Tabasco, to taste
How to cook:
  1. Preheat oven to 350˚. Pour milk over the bread slices. Allow it to soak in for several minutes.
  2. Place the ground beef, milk-soaked bread, Parmesan, seasoned salt, salt, black pepper, and parsley in a large mixing bowl. Pour in beaten eggs.
  3. With clean hands, mix the ingredients until well combined. Form the mixture into a loaf shape on a broiler pan, which will allow the fat to drain. (Line the bottom of the pan with foil to avoid a big mess!)
  4. Lay bacon slices over the top, tucking them underneath the meatloaf.
  5. Make the sauce: add ketchup, brown sugar, mustard, and hot sauce in a mixing bowl. Stir together. Pour 1/3 of the mixture over the top of the bacon. Spread with a spoon.
  6. Bake for 45 minutes, then pour another 1/3 of the sauce over the top. Bake for another 15 minutes. Slice and serve with remaining sauce.
  7. Serve with mashed potatoes. Yummy!
