  • 2 cups oreo cookies
  • ½ cup butter
  • 1 tbsp brown sugar
  • ¼ cup pecans
  • 3½ cup cream cheese
  • 1 cup sour cream
  • 1 tbsp vanilla
  • 2 eggs
  • ½ cup brown sugar
  • 3 tbsp flour all-purpose
  • 1 cup white sugar
  • ½ cup water
  • ½ cup butter
  • ½ cup heavy cream
  • ⅓ cup chocolate
  • 3 tbsp heavy cream (warm)

How to cook:
  1. Oreo crust
  2. Preheat the oven to 325 F / 160 C.
  3. Remove the filing from Oreo cookies and place cookies in the food processor. Process until crumbs.
  4. Add half pecans and 1 tbsp brown sugar. Process again.
  5. Add melted butter and process until wet crumbs.
  6. Prepare spring form pan. Smear the bottom and sides of the pan with butter. Cover the foil around the pan until half high of the sides.
  7. Add Oreo crumbs at the bottom of the spring form pan. Make it smooth with a spoon. Bake the Oreo crust 10 minutes. Let it cool on the counter top or wire rack.
  8. Cheesecake filling
  9. Lower the temperature of the oven to 300 F / 150 C.
  10. Put cream cheese, brown sugar and flour in a large bowl. Combine with a hand mixer just until incorporated.
  11. Add sour cream and vanilla flavoring. Mix until incorporated.
  12. Add eggs one by one, mixing with hand mixer. Don't forget to scrape the sides of the bowl.
  13. Put the spring form pan in a larger baking tray. Transfer the cream cheese filling on top of the Oreo base. Smooth the top with a spatula or spoon.
  14. Fill the large baking tray with hot water until 1/3 of the cake pan. Bake 1 hour and 30 minutes until set, but slightly jiggly in center. Let it cool in the oven for 30 minutes, then open the door and let it cool further 30 minutes.
  15. Transfer the cheesecake on the counter top or wire rack and let it cool completely for about 1-2 hours before placing in the fridge overnight. Run the knife around the cheesecake before placing it in the fridge.
  16. Caramel sauce
  17. Put white sugar in a pan and cover it with water. Bring it to the boil. Keep cooking it with a lid on about 20-30 minutes on low heat until browned. Don't stir!
  18. Add butter to the caramel and whisk on a low heat until incorporated.
  19. Add warm heavy cream and keep whisking on low heat until smooth.
  20. Pour 1/2 of caramel on top of the cooled cheesecake. Move the pan to let the caramel spread around. Place the cheesecake in the fridge for 10 minutes until caramel is set. Transfer other half of caramel in the piping bag.
  21. Chocolate sauce
  22. Add chopped dark chocolate in microwave-safe bowl. Cover with heavy cream.
  23. Microwave chocolate sauce for 30-40 seconds. Stir until smooth and transfer to the piping bag.
  24. Decoration
  25. Carefully remove the sides of the spring form pan.
  26. Pipe chocolate sauce on top of the cheesecake, then drizzle caramel sauce in between.
  27. Add remaining crushed pecans on top of the cheesecake.
  28. Highly recommend drizzle more caramel and chocolate sauce on each slice!

I bought a frozen assortment pack of cheesecake bites that included a turtle cheesecake that I just love!! So I made this recipe to replicate the one from Lawlers, but in a whole cheesecake. Prep time does not include cooling and refrigeration time.

  • 16 ounces cream cheese
  • 1/2 cup sugar
  • 1/2 teaspoon vanilla

  • 6 ounces pecans, toasted and chopped
  • 7 ounces caramel candies (half of a bag)
  • 1/4 cup milk
  • 1/3 cup mini chocolate chip

How to cook:
  1. Preheat oven to 325 degrees.
  2. Beat cream cheese, sugar and vanilla on medium speed until well blended.

How to cook:
  1. Crust Instructions
  2. Preheat oven to 325 F.
  3. Grease a 9" spring form pan on the bottom and up the side.
  4. Mix all ingredients until fully combined.
  5. Evenly press into the bottom of the pan.
  6. Bake for ten minutes.
  7. Set aside to cool to room temperature.
  8. Tightly wrap the pan in aluminum foil around the bottom and up the side.
  9. Caramel Pecan Layer Instructions
  10. Mix caramel sauce and pecans and spread evenly on cooled crust.
  11. Cheesecake Instructions
  12. In the bowl of a stand mixer, mix cream cheese and sugar until smooth.
  13. Mix in milk until fully combined.
  14. In a separate mixing bowl, mix eggs, sour cream, vanilla, and flour until fully combined.
  15. Add egg mixture to the stand mixer bowl and mix until smooth.
  16. Remove three cups of batter and place them in a mixing bowl (you can use the one you just used for the eggs).
  17. Melt chocolate chips using a double boiler or in twenty second increments in the microwave.
  18. Mix the melted chocolate into the batter you removed until the whole batter looks chocolate.
  19. Pour the chocolate batter onto the caramel layer in the pan.
  20. Gently pour the rest of the batter over the chocolate batter.
  21. Set the filled spring form pan into a large deep baking dish and fill the dish with boiling water halfway up the side of the spring form pan.
  22. Bake for one hour. The edge of the cheesecake should be set but the middle will be very jiggly.
  23. Turn the oven off and leave the cheesecake in the oven for several hours until it cools.
  24. Refrigerate overnight.
  25. The next day, remove the spring form pan's ring.
  26. Topping Instructions
  27. Spread caramel sauce over the top of the cooled cake.
  28. Top with chopped pecans.
  29. Drizzle with more caramel sauce and chocolate sauce, letting the sauces drip down the sides of the cake.
