Ingredients:
  • 1 1/2 cups sifted all-purpose flour
  • 1/2 cups sifted cake flour
  • 2 1/4 teaspoons baking powder
  • 3/4 teaspoons salt
  • 3/4 cup superfine sugar ((caster sugar))
  • 2 large eggs
  • 1/2 cup melted butter (or neutral flavored oil)
  • 1/2 cup milk ((any variety))
  • 1 medium Granny Smith apple (or other baking variety apple, cored, peeled, and thinly sliced)
  • 1/2 cup light brown sugar
  • 1 1/2 teaspoons cinnamon
  • 1/2 cup light brown sugar
  • 1/2 cup chopped walnuts (or pecans)
  • 1 1/2 teaspoons cinnamon
  • 1/2 cup all-purpose flour
  • 2 oz. butter (softened)

How to cook:
  1. Heat oven to 400 degrees F. (375 convection)
  2. Lightly grease a 9" square baking pan; set aside.
  3. In a large bowl, combine flours, baking powder, sugar, and salt. Make a well in center of the dry ingredients; set aside.
  4. In a medium bowl, whisk together eggs, butter or oil, and milk. Pour wet ingredients into well in center of dry ingredients and use a spatula to mix just until combined and no flour remains.
  5. In a small bowl, combine ingredients for filling. In another small bowl, combine ingredients for struesel topping. Use fingers to combine the butter into the dry mixture. The result should resemble coarse meal, with pieces the size of peas.
  6. Pour half of cake batter into pan and sprinkle filling evenly over it. Place sliced apples evenly over filling. Add remaining batter and sprinkle struesel topping evenly over top of batter.
  7. Bake for 25-30 minutes, or until knife inserted into cake comes out clean.
  8. Allow cake to cool for 10 minutes, then remove from pan and transfer to wire rack to cool completely.

  • 2 1/3 cups (290g) all-purpose plain flour ((note 1))
  • 3/4 cup (120g) coconut sugar (brown sugar or cane sugar)
  • 3 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • Pinch of any good-quality salt (optional)
  • 1 x (180g) medium-sized apple (grated very coarsely or chopped finely (note 2))
  • 1 cup (250g) dairy-free milk
  • 1/2 cup (120g) light-tasting vegetable oil

How to cook:
  1. Preheat the oven to 180°C (350°F). Grease or line an 8 inch (20 cm) with parchment paper.
  2. Making the vegan apple cake:
  3. Add all the dry ingredients to a large mixing bowl and mix until there are no lumps. Add all of the wet ingredients to the bowl and mix until combined. The batter should be thick but still spoonable and pourable. Pour the cake batter into the cake tin and smooth the top with a spoon or spatula.
  4. Preparing the crumb topping:
  5. In a medium bowl, add all the crumble ingredients. Mix with a spoon or your fingertips until combined and there are no more pockets of butter or flour.
  6. Assembling and baking:
  7. Arrange the thinly sliced apple on the top of the cake in 'fan' shapes or as desired. Sprinkle the crumble in the gaps on top of the cake.
  8. Bake the cake in the oven for 50-60 minutes or until a skewer can be inserted into the middle and there is no wet batter on it. The cake is very moist and there might be some crumbs on the skewer which is fine. If the cake is browning too quickly at any point, cover it with an oven-safe plate or aluminium foil.
  9. Allow the cake to rest in the cake tin for at least 5 minutes. Remove the cake from the tin and dust with powered sugar if desired. Serve as is, with dairy-free yogurt or ice cream!
  10. The cake can be kept at room temperature for 1 day or in an airtight container in the fridge for 3 days.

How to cook:
  1. Preheat oven to 350 degrees and grease an 8 inch springform pan.
  2. To make the crumb topping: combine the dry ingredients. Add the melted butter and vanilla. Mix until all is combined and moistened. Set aside.
  3. To make the cake: Cream together the 4 tbsp butter with 1/2 cup sugar in large bowl until fluffy. Add egg, vanilla, and sour cream. Stir to combine. In a separate bowl, stir together the 1 cup flour, baking soda, salt, and baking powder. Add to butter mixture and stir until just combined.
  4. Spread 1/2 of batter into prepared springform pan.
  5. Spread apple chunks evenly over batter followed by one cup of the crumb topping.
  6. Spread remaining batter on top of apple/crumb mixture ending with the remaining crumb topping.
  7. Place pan into preheated oven and bake for 40-50 minutes, or until toothpick comes out clean once inserted into center of cake.
  8. While cake is baking, make the glaze by combining the apple cider and powdered sugar.
  9. Once cake is baked, remove from oven and drizzle glaze evenly on top. Serve and of course, enjoy!!

  • ½ cup butter, melted (see notes)
  • ½ cup chopped California Walnuts
  • 1 ¼ cup all purpose flour
  • 1/3 cup light brown sugar
  • 1/3 cup granulated sugar
  • 2 teaspoons cinnamon
  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ cup butter, room temperature (see notes)
  • ¾ cup granulated sugar
  • 1 tablespoon vanilla extract
  • 3 large eggs
  • ¼ cup greek yogurt
  • 2 tablespoons milk
  • 2 medium apples, quartered, cored and thinly sliced (such as granny smith and pink lady)
How to cook:
  1. CRUMB TOPPING: In a medium bowl combine the walnuts, flour, brown sugar, granulated sugar, and cinnamon whisk together using a fork. Use the fork to stir while you pour in the melted butter. You'll notice the crumbs start to form. Break up any huge crumbs with the fork. Place the bowl in the refrigerator while you make the batter.
  2. Position a rack in the center of the oven and preheat the oven to 350ºF. Spray a 9-inch springform pan with cooking spray, set aside.
  3. CAKE BATTER: In a medium bowl whisk together the flour, baking powder, and baking soda. In the bowl of an electric mixer, beat the butter for 2 minutes until it's light and fluffy. Add the sugar and vanilla and continue to beat for an additional 1-2 minutes. Add the eggs, one at a time until each is incorporated before adding the next. Stop the mixer and scrape down the sides. With the mixer on low speed, add the dry ingredients in three editions alternating with the greek yogurt the first time and the milk the second time. Do not overmix. The batter with be quite thick and it's okay if it has a few lumps.
  4. Spread the batter into the prepared pan. Top with the sliced apples followed by the crumb topping and bake for 45-55 minutes or until a skewer inserted in the center of the cake comes out mostly clean (or with just a few crumbs). Let cool for 15-20 minutes before removing from springform pan.
