Vegan Gluten-Free Apple Upside Down Cake
An easy recipe for gluten-free apple upside down cake that also happens to be vegan! That’s right, this recipe is dairy-free, egg-free, and gluten-free. It’s a simple recipe that’s filled with warm cinnamon spice and apple flavours. It’s the perfect treat to serve as a gluten-free dessert after dinner or to enjoy with an afternoon cup of tea.

  • 2 apples ((peeled, cored, and sliced into ¼ inch slices (140g), see note below))
  • ⅓ cup (67g) brown sugar
  • ¼ teaspoon ground cinnamon
  • ½ cup (120ml) unsweetened non-dairy milk
  • ⅓ cup (80ml) oil
  • ¼ cup (62g) unsweetened plain applesauce
  • 2 teaspoons vanilla extract
  • ⅔ cup (134g) organic cane sugar
  • 1 ½ cup (222g) gluten free flour (**see important note about flour below**)
  • 2 teaspoons baking powder
  • 1 ½ teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon salt

How to cook:
  1. Preheat oven to 350°F (177°C).
  2. Prepare cake pan
  3. Line the an 8-inch cake pan with parchment paper cut to fit the bottom of the pan. Set aside.
  4. Prepare the apple layer
  5. Add sugar layer
  6. Mix the brown sugar and ¼ teaspoon of cinnamon together and sprinkle the mixture on top of the parchment paper in the cake pan. Spread it around so the entire bottom of the pan is covered.
  7. Arrange apples
  8. Arrange the apple slices on top of the brown sugar mixture, overlapping where needed. Set the pan aside.
  9. Prepare the cake batter
  10. Mix wet ingredients
  11. In a small bowl, mix the milk, oil, applesauce, vanilla, and sugar together.
  12. Mix dry ingredients
  13. In a large bowl, whisk the flour, baking powder, cinnamon, nutmeg, and salt together.
  14. Combine wet and dry ingredients
  15. Pour wet ingredients into dry ingredients and mix well to combine.
  16. Add batter to pan
  17. Pour batter into the cake pan.
  18. Bake for 33-35 minutes or until a toothpick inserted into the middle of the cake comes out clean.
  19. Let sit
  20. Remove from oven and allow cake to cool in pan on a wire rack for 10-minutes.
  21. Remove from pan
  22. After the 10-minutes have passed, run the tip of a knife around the inside rim of the pan. Place a plate over the cake pan and invert the cake pan and plate. Remove the pan and slowly peel away the parchment paper from the cake.
  23. Cool
  24. Allow the cake to cool completely before serving.

Vegan Apple Cake with Streusel Topping
A delicious, moist, and healthy take on vegan apple cake that is also gluten free with a simple streusel topping!

  • 1 1/4 cup (180g) gluten free 1-1 baking flour (Bob's Red Mill works great)
  • 2 medium apples, peeled (I prefer honey crisp or Granny Smith)
  • 1/4 cup maple syrup
  • 3 tablespoons ground flaxseed + 1/3 cup warm water
  • 1/2 cup coconut palm sugar
  • 1/3 cup olive oil
  • 1/3 cup unsweetened almond milk (or other non-dairy milk)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon baking soda
  • 1/2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 2 teaspoons pure vanilla extract
  • A handful of chopped walnuts (optional)
  • 3 tablespoons gluten free baking flour
  • 2 tablespoons coconut palm sugar
  • 1 heaping tablespoon vegan butter (I use Earth Balance)
  • 1/2 teaspoon cinnamon
How to cook:
  1. 1. Preheat the oven to 350 F and line the bottom of a round baking tin with parchment.
  2. 2. Core, peel, and cut the apples into 1cm cubes then drizzle with the maple syrup, mix, and set aside. 
  3. 3. Make the "flax egg" by stirring the ground flaxseed and water in a bowl and set aside to thicken. 
  4. 4. In another medium bowl stir together the coconut sugar with the oil, almond milk, and vinegar.
  5. 5. Sift the flour, baking soda, baking powder, cinnamon, and ginger into a large mixing bowl then pour in the coconut sugar almond milk mixture and the  flax egg and stir until a thick batter is achieved. 
  6. 6. Fold the apples and the chopped walnuts (if using) into the batter then spread evenly in the cake tin. 
  7. 7. Bake for 25 minutes, then remove from the oven and cover the cake with tin foil, then place back in the oven and bake for another 15 minutes until done.
  8. 8. While the cake is baking combine all of the streusel ingredients in a bowl and using a pastry cutter or a knife, cut/mix until crumbly (you can also use your hands).
  9. 9. Once the cake is done, let cool slightly then remove from the pan and sprinkle evenly with the streusel topping, cut into 6-8 slices and serve with your favorite vegan vanilla ice cream to top.

  • 500 g natural soya yogurt
  • 300 g gluten free self raising flour
  • 200 g caster sugar
  • 100 ml oil (I use vegetable or sunflower)
  • 1 tsp vanilla extract

How to cook:
  1. In a large bowl mash the banana with a fork.
  2. Add the sugar, vanilla extract and yogurt and mix to combine.
  3. Finally add the flour and oil and beat together until all ingredients are thoroughly incorporated.
  4. Pour half the mixture into a prepared lined 2cm round cake tin or a 20cm square tin.
  5. Then take the apple slices and spread them evenly over the cake batter.
  6. Pour the remaining batter over the apples slices and put into the oven at 200°C | 180°C Fan | 400°F | Gas 6 for 40 minutes.
  7. The cake is cooked when it has a soft bounce to it (or a cocktail stick comes out clean)
  8. Leave to cool before eating or enjoy still slightly warm with some delicious free from custard

  2. Oil your cake pan and dust it with flour. Preheat the oven to 360F or 180C.In a bowl, add plant milk, oil, and sugar. Whisk to combine.

  4. Sift in flour, cinnamon and baking powder. Whisk with a hand mixer for a few seconds to combine. You should have a smooth but thick batter. Important: Do not over-mix or it will turn out gummy.

  6. Add small apple pieces from 1½ apples. If you apple is small you can add up to 2 apples. Apples should be peeled. Mix with a spatula to combine.

  8. Pour the cake batter into the cake pan and cover the top of the cake with thin apple slices arranged in a circular pattern, overlapping the slices a bit. Sprinkle the apples with 1 to 2 tablespoons of sugar.
