Ingredients:
- 250 g plain flour
- 125 g dairy-free block 'butter'
- 100 g caster sugar
- 1/2 tsp ground cinnamon
- 2 tbsp dairy-free cream
- 1 tbsp demerara sugar ((optional))
- 1 lemon
- 4 cooking apples (eg. Bramleys)
- 4 eating apples
- 70 g soft light brown sugar
- 1/2 tsp cinnamon
- 2 tbsp cornflour
- 60 ml apple juice ((or water))

- Preheat the oven to 180°C (fan) / 350°F / Gas Mark 4.
- For the crumble:
- Tip the flour and butter into a large bowl. Rub the butter into the flour with your fingers until the mixture resembles fine breadcrumbs.
- Stir the sugar and cinnamon into the mixture.
- Add the dairy-free cream and rub through the mixture with your fingers. Set the crumble mix aside.
- For the apple filling:
- Squeeze the juice of the lemon into a large bowl.
- Peel and slice the apples, tossing the slices in the lemon as you go to stop them turning brown.
- Toss the sugar, cinnamon, cornflour and apple juice through the apples.
- Tip the apple mixture into a large ovenproof dish.
- Tip over the crumble mix and spread out evenly. Sprinkle over the demerara sugar.
- Bake for 30-35 minutes until the crumble is turning golden brown and a little juice is bubbling up at the sides of the dish. Serve with vegan custard or ice cream.

- For the crumble mixture:
- Preheat oven to 180°C/350°F (160°C/325°F for fan or convection oven). Have an 8x10-inch baking dish or pan ready that's at least a few inches deep.
- In a large bowl, mix together the flour, sugar and cinnamon.
- Add the butter and use your fingers to rub it into the dry mixture until it resembles breadcrumbs. Set the topping aside while you prepare the filling.
- For the filling:
- Peel and core the apples, then chop them into slices that are around ¼ of an inch thick. If they are too thick, they won't soften enough while baking.
- Place the apple slices in a large bowl with the sugar and cinnamon then give it a quick mix to combine.
- Transfer the apples to your baking dish and spread them out evenly.
- Pour in the crumble mixture and distribute it evenly over the apples. Press it into place using the back of your spoon.
- Bake for around 45-50 minutes, until the apples are tender. Serve warm with vegan cream, ice cream or custard.

- 650 grams of sliced apples (approx 4 apples - we used Honeycrisp and Ambrosia)
- ⅓ cup (80ml) packed brown sugar
- ¼ cup (60ml) vegan butter or margarine, softened
- 2 tbsp (30ml) unbleached all-purpose flour
- ½ tsp (2.5ml) ground cinnamon
- ⅔ cup (160ml) rolled old-fashioned oats
- ½ cup (125ml) packed brown sugar

How to cook:
- Preheat your oven to 350°F (177°C).
- In a medium-sized bowl, gently mix together sliced apples, ⅓ cup packed brown sugar, ¼ cup vegan butter, 2 tbsp flour, and ½ tsp ground cinnamon. Layer apple mixture into the bottom of a 8”x8” baking dish.
- In the same bowl used to mix the apples, combine ⅔ cup oats, ½ cup packed brown sugar, ⅓ cup vegan butter, ¼ cup pecans, 3 tbsp all purpose flour, and ¼ tsp cinnamon. Mix well.
- Use your hands to distribute the crumble mixture evenly over the apple layer, encourage the crumble mixture to form some nice clumpy bits.
- Bake for 30 minutes or until the apple layer is bubbling and the crisp/crumble layer is crisp and golden-brown.
- Let sit for 15 minutes before serving.
- Serve with a scoop of vegan vanilla ice cream.

- Chop apples into cubes until they fill the bottom of a 8x8 baking dish. Do not worry about the type of apples or about skinning them.
