This 'ultimate' vegan apple crumble is a showstopping dessert. A secret ingredient for a moist and flavourful crumble topping, and two varieties of apple make a delicious filling.

  • 250 g plain flour
  • 125 g dairy-free block 'butter'
  • 100 g caster sugar
  • 1/2 tsp ground cinnamon
  • 2 tbsp dairy-free cream
  • 1 tbsp demerara sugar ((optional))
  • 1 lemon
  • 4 cooking apples (eg. Bramleys)
  • 4 eating apples
  • 70 g soft light brown sugar
  • 1/2 tsp cinnamon
  • 2 tbsp cornflour
  • 60 ml apple juice ((or water))

How to cook:
  1. Preheat the oven to 180°C (fan) / 350°F / Gas Mark 4.
  2. For the crumble:
  3. Tip the flour and butter into a large bowl. Rub the butter into the flour with your fingers until the mixture resembles fine breadcrumbs.
  4. Stir the sugar and cinnamon into the mixture.
  5. Add the dairy-free cream and rub through the mixture with your fingers. Set the crumble mix aside.
  6. For the apple filling:
  7. Squeeze the juice of the lemon into a large bowl.
  8. Peel and slice the apples, tossing the slices in the lemon as you go to stop them turning brown.
  9. Toss the sugar, cinnamon, cornflour and apple juice through the apples.
  10. Tip the apple mixture into a large ovenproof dish.
  11. Tip over the crumble mix and spread out evenly. Sprinkle over the demerara sugar.
  12. Bake for 30-35 minutes until the crumble is turning golden brown and a little juice is bubbling up at the sides of the dish. Serve with vegan custard or ice cream.

  • 160 g All purpose flour ((1+¼ cups))
  • 100 g Soft brown sugar ((½ cup))
  • 1 Teaspoon Ground cinnamon
  • 100 g Vegan butter ((3/8 cups + 1 tablespoon))
  • 700 g / 24oz Bramley apples* ((around 3-4))
  • 4 Tablespoons Soft brown sugar

How to cook:
  1. For the crumble mixture:
  2. Preheat oven to 180°C/350°F (160°C/325°F for fan or convection oven). Have an 8x10-inch baking dish or pan ready that's at least a few inches deep.
  3. In a large bowl, mix together the flour, sugar and cinnamon.
  4. Add the butter and use your fingers to rub it into the dry mixture until it resembles breadcrumbs. Set the topping aside while you prepare the filling.
  5. For the filling:
  6. Peel and core the apples, then chop them into slices that are around ¼ of an inch thick. If they are too thick, they won't soften enough while baking.
  7. Place the apple slices in a large bowl with the sugar and cinnamon then give it a quick mix to combine.
  8. Transfer the apples to your baking dish and spread them out evenly.
  9. Pour in the crumble mixture and distribute it evenly over the apples. Press it into place using the back of your spoon.
  10. Bake for around 45-50 minutes, until the apples are tender. Serve warm with vegan cream, ice cream or custard.

  • 650 grams of sliced apples (approx 4 apples - we used Honeycrisp and Ambrosia)
  • ⅓ cup (80ml) packed brown sugar
  • ¼ cup (60ml) vegan butter or margarine, softened
  • 2 tbsp (30ml) unbleached all-purpose flour
  • ½ tsp (2.5ml) ground cinnamon
  • ⅔ cup (160ml) rolled old-fashioned oats

How to cook:
  1. Preheat your oven to 350°F (177°C).
  2. In a medium-sized bowl, gently mix together sliced apples, ⅓ cup packed brown sugar, ¼ cup vegan butter, 2 tbsp flour, and ½ tsp ground cinnamon. Layer apple mixture into the bottom of a 8”x8” baking dish.
  3. In the same bowl used to mix the apples, combine ⅔ cup oats, ½ cup packed brown sugar, ⅓ cup vegan butter, ¼ cup pecans, 3 tbsp all purpose flour, and ¼ tsp cinnamon. Mix well.
  4. Use your hands to distribute the crumble mixture evenly over the apple layer, encourage the crumble mixture to form some nice clumpy bits.
  5. Bake for 30 minutes or until the apple layer is bubbling and the crisp/crumble layer is crisp and golden-brown.
  6. Let sit for 15 minutes before serving.
  7. Serve with a scoop of vegan vanilla ice cream.
