How to cook:
  1. Preheat oven to 350 degrees F and grease the inside of an 8-inch cake pan. Set aside.
  2. In a skillet on the stove over medium heat, cook butter, brown sugar, and sliced apples for a few minutes until soft. Set aside to cool.
  3. In a large mixing bowl, whisk together the flour, baking soda, salt, granulated sugar, cinnamon, and nutmeg.
  4. Add in the vanilla, vegetable oil, vinegar, and water. Mix until combined.
  5. Pour the apple slices into the prepared cake pan and arrange apple slices into an even layer, but some overlapping is okay.
  6. Pour your cake batter over the top of the apple slices.
  7. Bake at 350 degrees F for 35-40 minutes or until a toothpick can be inserted and come out clean.
  8. Wait about 10 minutes before flipping the cake over and revealing the apple slices on the top of the cake.
  9. Slice and serve.

Ingredients:
  • 4 apples (3 will go on the top and 1 will go in the cake batter)
  • 3/4 cup vegan butter (divided. 1/4 cup for the top and 1/2 cup in the cake)
  • 1/2 cup sorghum syrup (you can substitute maple syrup, cane syrup or Sugar in the Raw Syrup for the Sorghum syrup)
  • 2 cups unbleached flour
  • 3 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon kosher salt
  • 1 cup granulated white sugar
  • ½ cup apple sauce
  • 1 teaspoon vanilla
  • 1 `teaspoon lemon juice
  • 1 cup oat milk
How to cook:
  1. Preheat your oven to 350°
  2. Spread ¼ cup of softened vegan butter on the bottom of the cast iron skillet and pour the sorghum syrup over it
  3. Peel the apples and cut 3 of them into 1/8-inch thick wedges
  4. Arrange sliced apples over the vegan butter and syrup. Set this aside and make the cake batter.
  5. Cream ½ cup vegan butter with sugar until light and fluffy, about 5 minutes
  6. Add applesauce, vanilla and lemon juice to the creamed vegan butter and mix until well incorporated.
  7. Mix flour, baking powder, cinnamon, and salt together in a bowl
  8. Alternate adding the flour mixture and oat milk into the creamed butter. Start with 1/3 of the flour followed by 1/2 of the oat milk. Continue adding milk and flour until it's all incorporated.
  9. Shred the remaining apple and mix it into the batter.
  10. Pour the batter over the apples in the skillet and bake for 40 to 45 minutes
  11. Remove the cake from the oven and let it cool for 10 minutes. Carefully invert the cake onto a large cake plate or platter.

How to cook:

Sprinkle some coconut sugar over the cake tin and arrange the apples in a circular pattern, starting from the outside and working in. Repeat, creating layers, until you have used up all the apples.
  2. Preheat the oven to 180 degrees C/350 degrees F.
  3. Meanwhile, whip the aquafaba using a handheld mixer until stiff peaks form. This usually takes around 10 minutes, so be patient with it.
  4. Once stiff peaks form, continue whisking and gradually add in the coconut sugar. Next add the lemon juice and cinnamon. Once they are well-combined, stop the mixer and gradually add the flour, mixing using a spatula or a spoon.
  5. Pour the batter into the cake tin and bake in the preheated oven for 20 minutes, until golden brown. When the cake cools down fully, flip it by holding the bottom of the cake while wearing oven gloves, placing a plate or a cake stand on top of it and flipping it over carefully.
