  • 3¼ cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1½ cup non-dairy milk

How to cook:
  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  2. In a large bowl, mix together the flour, baking powder, and salt.
  3. Stir in the vegan milk.
  4. Knead the dough for a couple of minutes until it forms a cohesive ball. If it's sticky, add a little more flour. If it's too dry to form a ball, add a little more milk.
  5. Place the ball of dough onto the center of the baking sheet.
  6. Press down so it forms a disc, about 1½-2 inch thick.
  7. Score the dough with an X. Bake for 30-40 minutes or until brown on top. With about 5-10 minutes left, you can brush some vegan butter on top for a nice golden brown color.
  8. Let the bread cool for about 10 minutes before slicing.

How to cook:

How to cook:
  1. Preheat the oven to 200C/400F. Line a large baking tray with parchment paper and set aside.
  2. In a small bowl, add your milk of choice with vinegar and let sit until it curdles, around 10 minutes.
  3. In a large mixing bowl, add your flour, salt, sugar and baking soda and mix well. Using a 1/4 cup, add your curdled milk into it in two increments, and mix gently, until just combined.
  4. Lightly flour a kitchen surface. Sprinkle a tablespoon of flour on top of the dough and transfer to the floured surface. Gently knead the dough, around 8-10 times, and form a dome shape. The dough should still be quite sticky. Using a sharp knife, slice twice across the dough, forming a cross shape, around half an inch thick.
  5. Transfer the bread dough onto the lined tray. Bake for 20-25 minutes, checking around the 20 minute mark. The bread is cooked when golden brown on the tops and when tapped, makes a hollow sound from the base.
  6. Remove from the oven and allow to cool on the tray completely, before slicing and toasting.

  • 250 grams / 2 cups all-purpose flour ((plain flour in the UK))
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda ((bicarbonate of soda in the UK))
  • 1 teaspoon fine salt
  • 1 teaspoon white or cane sugar
  • 2 tablespoons liquid oil or melted vegan butter (OPTIONAL) (, (plus a bit more for brushing the flatbreads before cooking) )
  • 240 mls / 1 cup non-dairy milk (, unsweetened and unflavoured )

How to cook:
  1. To a large bowl add the flour, baking powder, baking soda, salt and sugar. Mix them to combine.
  2. Add the optional oil to the bowl along with about ¾ of the milk. Mix well, then gradually add the remaining milk until a slightly tacky (not sticky) dough is formed. You might not need all of the milk. I start off mixing with a spoon then use a clean hand to bring it together.
  3. Give it a little knead together a few times in the bowl to bring it together into a smooth ball.
  4. Transfer the dough to a lightly floured surface and cut into 4 evenly sized pieces. Shape each one into a neat-ish ball, sprinkle the top with a little flour and roll out in a rough circle shape about ¼ inch thick. Sprinkle the top with a little more flour as you go if the rolling pin starts to stick.
  5. Heat a griddle, frying pan or skillet over medium-high heat. Pour a little oil (or melted vegan butter) in a small bowl and have it handy with a brush.
  6. When the pan is really hot, brush the top of one of the flatbreads with a light coat of the oil/butter (or more than one if they will fit in the pan together) and carefully lift and place oil side down in the pan. As soon as it's in the pan brush the top with some more oil ready for when you flip it. Let the flatbread cook for about 3 minutes or until well coloured with dark brown spots underneath. Then flip and cook the other side for about 2 minutes or until nicely coloured.
  7. Remove from the pan and wrap in a clean dish towel to keep nice and soft while you cook the remaining flatbreads. Enjoy warm or at room temperature.
