  • 425g box Betty Crocker Lemon Cake Mix
  • 330 ml can lemonade (soda)
  • 400g tub Betty Crocker Vanilla Frosting
  • peel from 1 lemon, finely grated
  • 2 tbsp freshly squeezed lemon juice
  • 1 can vegan whipped cream
  • sprinkles

How to cook:
  1. Heat the oven to 180c/160c fan/gas mark 4/350f.
  2. Grease and line 2 x 20cm/7.8 inch cake tins.
  3. Sieve cake mix into a large bowl.
  4. Pour in the lemonade and gently fold into the cake mix.
  5. Divide between the two cake tins and pop in the oven for 23-25 minutes until golden and an inserted skewer comes out clean.
  6. Pop the pans on a baking rack to cool. Once they are cool enough to handle, gently tip out the cakes and peel off the baking paper. Place back on the racks to cook completely.
  7. In a bowl whisk the frosting with lemon peel and juice.
  8. Place one cake on a plate, spread with a generous layer of frosting, add the next layer and more frosting in an even layer.
  9. Finish with swirls of whipped cream and sprinkles.
  10. Enjoy!
