- 4 cups (600 g) almonds, roasted, unsalted

How to cook:
- Place ingredients into the Vitamix container in the order listed and secure lid. Start the blender on its lowest speed, then quickly increase to its highest speed. Use the tamper to press the ingredients into the blades. In 1 minute you will hear a high-pitched chugging sound. Once the butter begins to flow freely through the blades, the motor sound will change and become low and laboring. Stop machine. Store in an airtight container. It can also be frozen for longer storage.

- Preheat oven to 350 degrees and spread almonds onto a baking sheet. Roast in oven for 10-12 minutes. You want them smelling good and browned a bit…not stinky and burned.
- Remove from oven and let cool. Usually about 10 minutes or so.
- Place almonds in food processor and let process until you see almond butter. This part of the process usually takes around 11-12 minutes so please, be patient. The nuts should go from whole, to ground up & choppy, to lumpy, and finally, nut butter. Also, you will more than likely need to stop the food processor periodically to scrape down the sides…perfectly normal.
- Let cool then store in a glass jar with a lid.
