Ingredients:
  • 1 lb ground turkey (extra lean ground turkey or beef)
  • 1 cup onion (chopped)
  • 14.5 oz diced tomatoes
  • 15 oz tomato sauce
  • 3 cups bell peppers (chopped (I've added up to four peppers, and it's yummy!) I like green and red peppers)
  • 2 cups broth (low sodium, or water)
  • 1/2 cup brown rice (dry and rinsed, short grain)
  • 1 clove garlic
  • 2 tsp oregano
  • 1/4 tsp black pepper

How to cook:
  1. Crock Pot
  2. Brown ground turkey in a skillet over medium heat.
  3. Drain turkey, if necessary. Add the ground turkey, broth or water, tomatoes (including the juice), tomato sauce, chopped peppers and onions, black pepper, garlic, and oregano to the Crock Pot.
  4. Cover and cook on low for 6-8 hours. *Your rice should be added 1 hour before end of cooking. With this method of cooking, you can also used cooked rice and add it right at the end of your cooking.
  5. Pressure Cooker
  6. Spray the pot with oil and sauté the ground turkey.
  7. Add all ingredients to your pot. Put the lid on, seal the valve, and set for 8 minutes high pressure.
  8. Quick release the pressure when done.
  9. Stove Top
  10. Sauté the ground turkey in a large pot until no longer pink.
  11. Add broth or water, tomatoes (including the juice), tomato sauce, chopped peppers and onions, rice, garlic, oregano, and pepper. Cook for 5 minutes on medium-high, then reduce the heat to medium-low and simmer for 20-25 minutes.
  12. Test the peppers to make sure they’re cooked enough for you before removing the soup from the stovetop.

Ingredients:
  • 1 lb ground meat
  • 1 green bell pepper (chopped)
  • 1/4 tsp dried sage
  • 1 C onion(finely diced)
  • 1 can diced tomatoes (29 oz
  • Chopped fresh sage
  • 1 can tomato sauce (15 oz)
  • 1 can chicken broth (14 oz)
  • 1/4 tsp dried thyme
  • salt and pepper (to taste)
  • 1 C white rice
How to cook:
  1. Prep stockpot with cooking spray.
  2. Add the ground meat in the stockpot.
  3. Brown the meat. Drain the fat.
  4. Add the pepper and onion.
  5. Cook the onion and pepper until the onion is translucent but not brown.
  6. Add the tomatoes, tomato sauce, chicken broth, thyme, and sage. Season with the salt and pepper. (to taste).
  7. Cover the stockpot. Allow the soup to simmer for 30-45 minutes. (Or until the peppers are tender)
  8. Add 2 cups of water in the saucepan. Bring to a boil.
  9. Add rice to saucepan, cooking until tender.
  10. Add cooked rice to the soup.
  11. Garnish with the fresh chopped sage.

  • 1 tbsp extra virgin olive oil
  • ½ medium red onion, diced
  • 2 large bell peppers, seeded and diced
  • 2 tsp garlic powder, minced
  • 1 tbsp Italian seasoning
  • Sea salt and black pepper, to taste
  • 2 lbs lean ground chicken
  • 3½ cup beef or chicken broth, low sodium
  • 1 28- oz can crushed tomatoes, with liquid
  • 1 cup long-grain brown rice, uncooked
  • 3 tbsp fresh parsley, chopped

How to cook:
  1. Add olive oil to Instant Pot® and select the Sauté function. Set to high and once the display reads “hot,” add red onion, bell peppers, garlic powder, and Italian seasoning. Season with salt and black pepper, to taste, and cook, stirring continually, until the onions and pepper soften and develop a bit of color, approximately 4-5 minutes.
  2. Transfer veggie mixture to a medium bowl. Add ground chicken and brown for 3-4 minutes, or until no longer pink inside, stirring occasionally. Turn the unit off and carefully drain any excess fat from the container.
  3. Pour sautéed veggies on top of the browned beef. Add broth, crushed tomatoes, and brown rice. Stir to combine and season with salt and black pepper, as desired.
  4. Add the lid and set the pressure valve to “sealing.” Select the “Manual” cooking option on the high setting and set cook time to 20 minutes. When done cooking, allow the pressure to release naturally for 10 minutes, and then do a quick release for any remaining pressure.
  5. To serve, transfer soup to individual bowls and garnish with fresh chopped parsley, if desired. Enjoy!

  • 3 cups cooked brown rice (omit for paleo diet)
  • 1 lb 95% lean ground beef
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped red bell pepper
  • 1 cup finely diced onion
  • 3 cloves garlic (chopped)
  • 2 cans (14.5 oz each cans petite diced tomatoes)
  • 1 3/4 cups tomato sauce
  • 2 cups reduced sodium (fat-free chicken broth)
  • 1/2 tsp dried marjoram
  • salt and fresh pepper to taste

How to cook:
  1. Stove Top:
  2. In a large pot or dutch oven, brown ground meat on high heat and season with salt.
  3. Drain fat if any, reduce heat to medium-low, then add peppers, onions and garlic.
  4. Cook about 5 minutes on low heat.
  5. Add tomatoes, tomato sauce, chicken broth, marjoram and season with salt and pepper to taste. Cover and simmer on low heat for 30 minutes.
  6. Serve about 1 1/2 cups of soup in each bowl and top with 1/2 cup cooked brown rice.
  7. Instant Pot:
  8. Press saute button on Instant Pot, spray the pot with nonstick spray, add the ground meat and salt and cook until no longer pink, 5 to 8 minutes.
  9. Drain fat if any, then add peppers, onions and garlic and cook 4 to 5 minutes.
  10. Add tomatoes, tomato sauce, chicken broth, marjoram and season with salt and pepper to taste. Cover and cook high pressure 15 minutes. Natural release.
  11. Serve about 1 1/2 cups of soup in each bowl and top with 1/2 cup cooked brown rice.
  12. Note: since there is no evaporation in the pressure cooker, you can reduce the broth by 1/2 cup.
