  • 4 medium Fresh apple(s) cored and thinly sliced (unpeeled)
  • 1.25 oz Frozen apple juice concentrate (undiluted) thawed, about 2 tbsp
  • 3 Tbsp Dark brown sugar
  • 2 tsp Margarine
  • 2 tsp Cornstarch
  • 0.75 cup(s) Fat free creamer such as fat-free half-and-half
  • Calories: 70 kcal
How to cook:
  1. Coat a large skillet with cooking spray. Add apple slices and sauté over medium heat, stirring frequently, until lightly browned, about 5 minutes. Add apple juice concentrate and simmer until juice is absorbed, about 2 to 3 minutes; set aside over very low heat.
  2. Meanwhile, combine sugar and margarine in a heavy-bottomed pot. Cook over low heat until sugar melts, stirring frequently, about 2 minutes.
  3. In a small bowl, stir together cornstarch and 2 tablespoons of half-and-half until smooth; add remaining half-and-half and pour cornstarch mixture into melted sugar. (Note: Be careful of splattering because the mixture may sizzle.) Cook over medium heat, stirring constantly, until mixture is thickened and smooth, about 2 minutes. Yields about 1 cup of apple slices and 2 tablespoons of sauce per serving.

  • 3 small Apple peeled, cut into thin wedges
  • 2 tsp Cornflour
  • 0.5 tsp Mixed spice
  • 0.75 cup(s) White self-raising flour (110g)
  • 0.25 cup(s) Brown sugar (55g)
  • 0.25 cup(s) Granulated stevia sweetener (55g)
  • 0.333 cup(s) Skim milk (80ml)
  • 1 medium Egg(s) lightly beaten
  • 60 g Reduced fat oil spread melted

How to cook:
  1. Preheat oven to 180°C. Lightly spray a 6-cup (1.5L) capacity 20cm square ovenproof dish with oil. Place the apple in a medium bowl. Add the cornflour and mixed spice and toss to coat. Arrange apples over the base of the prepared dish.
  2. Sift the flour into a medium bowl and stir in half the sugar. Whisk the milk, egg and half the melted spread in a jug until combined. Whisk the milk mixture into the flour mixture until combined.
  3. Spread pudding mixture over the apples. Place the remaining sugar and melted spread in a heatproof jug. Whisk in 1¼ cups (310ml) boiling water until combined. Gently pour over the back of a spoon over pudding. Bake for 25-30 minutes or until firm to touch. Allow the pudding to cool for 5 minutes before serving.
