Wheaten bread recipe mary berry - Irish soda bread
This is delicious served with soup, cold meats, smoked salmon or prawn cocktails, but I think I like it best smeared with butter, fresh from the oven. My husband, a native Northern Irishman, loves this bread with a bowl of tomato and lentil soup or with butter and cheese or jelly.

Ingredients:
- 567 grams coarse wholemeal flour
- 180 grams all-purpose flour
- 142 grams caster sugar
- 2 tsp baking powder
- 1.5 tsp baking soda
- 0.5 tsp salt
- 76 grams margarine
- 3 eggs
- 568 grams buttermilk*
How to cook:
- Preheat oven to 200°C (392°F). Grease two loaf tins and line with parchment paper.
- In a large bowl, mix together the flours, sugar, baking powder, baking soda, and salt. Rub in the margarine until it resembles breadcrumbs.
- In a separate bowl, whisk together the eggs and buttermilk. Make a well in the flour mixture, and pour in the liquid.
- Mix together just until all the flour is moistened, being careful not to overmix.
- Divide the batter between the two tins (about 820 g each) and lightly flatten the tops.
- Bake in the preheated oven for 30-35 minutes, until a toothpick comes out clean and the top is golden. You want to make sure the bread is fully baked, without becoming dry.
- Allow the loaves to cool in their tins for a few minutes before removing to a rack. Once they are only slightly warm to the touch, wrap them well in cling film to prevent drying out.

Wheaten Bread

This wheaten bread is a traditional Irish bread and something quick and easy to bake. Melt a small knob of butter over a slice and enjoy with homemade vegetable soup.

- 140 g bread flour
- 350 g whole meal flour
- 1 1/4 tsp Salt
- 1 1/4 tsp bicarbonate of soda
- 2 tsp Caster Sugar (optional)
- 60 g Butter
- 450 ml Buttermilk
- 6 tbsp Vegetable Oil (or melted butter)
How to cook:
- Preheat oven to 200 degrees C (gas mark 6).
- Lightly flour a baking tray or 23x12cm loaf tin.
- Sift together the bread flour, wholemeal flour, salt, bicarb of soda, and 2 teaspoons sugar in a bowl.
- Rub the butter into the flour mixture
- Make a well in the centre of the mixture and pour in the oil and buttermilk. Stir with a spatula until dry mixture is completely moistened.
- Move the dough to a lightly-floured surface. Lightly knead the dough for no more than 1 minute.
- Shape and place the dough on a baking tray (or into the prepared tin).
- Cut a cross into the top of the loaf with your finger.
- Brush the top with milk or buttermilk.
- Bake in the preheated oven for 30 minutes. Reduce heat to 180 degrees C (gas 4); rotate tin and bake another 30 minutes.
- Allow loaf to cool on a wire rack before slicing

Wheaten Bread is the term we Northern Irish people use for brown soda bread. This is a genuine recipe from my home economics teacher at school (albeit slightly fiddled by me). In fact, it is the first thing I ever cooked myself! As with all soda breads, no yeast is involved. Ingredients:
- 300 grams wholewheat bread flour
- 100 grams plain flour
- 1 teaspoon salt
- 1 teaspoon bicarbonate of soda
- 60 grams butter (or margarine)
- 2 tablespoons caster sugar
- 300 millilitres buttermilk
- 1 tablespoon rolled oats
How to cook:
- Preheat your oven to 200ºC/gas mark 6.
- Place the flours, salt and bicarb in a bowl, stirring to combine.
- Using your fingertips, rub in the margarine until the mixture resembles fine breadcrumbs.
- Add the sugar, and stir to combine.
- Gradually stir in the buttermilk until you get a soft, but not sticky, dough. You won't need to use all of it. Don't worry too much if it is sticky, though (mine frequently is). Just dust with some extra flour!
- Turn out onto a floured surface, and briefly knead the dough (with your knuckles). Pop the dough into a lightly floured 20 cm cake tin, and shape into a round.
- Using a sharp knife, mark the dough into four farls. Brush the surface with a little extra buttermilk, then sprinkle over the oats (or some additional flour).
- Bake for approximately 30 minutes. A cake tester should come out pretty much clean when it is ready.
- Leave to cool on a wire rack for as long as you can bear. Enjoy!
