  • 1 brown onion, Peeled & quartered
  • 1 carrot, Roughly chopped
  • 100 grams apple cider vinegar
  • 1500 grams hot water
  • 1 tablespoon brown sugar
  • 1200 grams Silverside, (Can be bigger or smaller just adjust cooking time to suit)
  • 50 grams Butter
  • 40 grams flour
  • 100 grams cream, (Or milk)
  • 1 tablespoon Dijon mustard
  • 1 Cup Grated Cheese
How to cook:

  • ¾ cup Whole Milk ((NO SKIM OR 2%))
  • ¼ lb. American Cheese
  • ¼ lb. Monterey Jack Cheese
  • ¼ tsp. Salt (*To taste)
  • ⅛ Tsp. Nutmeg (*Optional)

How to cook:
  1. Grate your Monterey Jack cheese and set aside. Since American cheese comes in slices, you can't grate it. Either place it in a food processor to chop OR simply chop it up with a large knife into small pieces.
  2. Heat milk over medium heat until it is just warm. Add cheeses and turn down heat to the LOWEST setting possible! Stir!
  3. The cheese will slowly begin to melt but make sure to stir every so often with a flat spatula or spoon to make sure the bottom does not burn.
  4. Cheese sauce should be fully melted in about 10 minutes. Turn off heat and allow to slightly cool before serving. This will allow it to thicken up a bit. Serve with tortilla chips, pretzels or fries!

  • 500ml milk
  • 4 tbsp plain flour
  • 50g butter
  • 100g grated strong cheddar (or 50g grated cheddar, 50g crumbled blue cheese)

  3. Whisk for another 2 mins while the sauce bubbles then stir in 100g grated strong cheddar cheese (or 50g grated cheddar, 50g crumbled blue cheese) until melted.
Notes: Cheese and Mustard Sauce, Directions. Whisk milk and cornflour together and add to 1.5L slow cooker. Stir through cheese and mustards and salt. Cook on HIGH for 1.5 hours. Whisk with fork occasionally during cooking time to prevent any lumps or sticking.
