  • 1 piece lean silverside, 1.5 to 2Kg
  • 6 cloves
  • 1 litre Boiling water
  • 1 orange, thickly sliced
  • 1 onion, thickly sliced
  • 1 clove garlic
  • 2 stalks Celery, roughly chopped
  • 1 bay leaf
  • potatoes, peeled and chopped
  • Baby Carrots
  • cauliflower florets
  • cabbage, sliced
  • Whatever vege you like
  • 3 eggs
  • 1 tablespoon Keens mustard powder
  • 30g sugar
  • 1/4 cup --- white vinegar
  • 3/4 cup liquid in which meat has been cooked, strained

Ingredients:
  • 2 Tablespoons Butter
  • 1 small Shallot ((minced))
  • 1/2 Tablespoon Fresh Cilantro Leaves ((chopped))
  • 1/4 teaspoon Curry Powder
  • 3/4 cup Dry White Wine
  • 1/4 cup Brandy
  • 1/2 cup Chicken Stock/Broth
  • 1 cup Heavy Cream
  • 1 teaspoon Dry/Ground Mustard Seed
  • 2 Tablespoons Whole Grain Mustard
  • 1/16 teaspoon Freshly Ground Black Pepper
How to cook:
  1. Heat saucepan over medium heat. Add Butter and Shallots and cook until soft.
  2. Pour in Wine and Brandy and bring to low boil. Allow liquid to reduce, about 5 minutes. Add Chicken Stock. Whisk in Dry Mustard, Curry Powder, Cilantro, Whole Grain Mustard and Pepper. Simmer for 5 minutes.
  3. Turn heat down and add in Heavy Cream. Cook on low until sauce has reduced and is thick enough to coat the back of a spoon.

Honey Mustard Corned Beef Silverside

Ingredients:
  • 1 piece of corned beef, rinsed (any size to suit your slow cooker)
  • 2 tblsp Honey
  • 2 tblsp Brown Sugar
  • 2 tblsp Dijon Mustard
  • 2 tblsp Wholegrain (seeded) Mustard
  • 80g plain flour
  • 80g butter
  • 500ml milk
  • 500ml reserved u2018stocku2019 after cooking beef

How to cook:
  1. 1 Combine marinade ingredients in a small bowl. Spray slow cooker with cooking oil and place beef into cooker. Pour marinade over beef. Cook on low for 8-10 hours.
  2. 2 Once cooked, pour liquid that has accumulated (the u2018stocku2019) into a jug and reserve (do not discard).
  3. 3 In a saucepan, melt butter over medium heat then add flour and stir for 3-5 minutes. Add 500m milkl & 500ml of reserved stock and whisk gently until thick (If you donu2019t have enough stock from cooking, top up with water).
  4. 4 Serve beef with honey mustard white sauce.
  5. 5 Use remaining honey mustard white sauce as a recipe base for Honey Mustard Chicken, the same as using a jar sauce (eg chicken tonight jar sauce).
