- Preheat an air fryer to 350 degrees F (175 degrees C) according to manufacturer's instructions.
- Mix salt, paprika, onion powder, thyme, white pepper, black pepper, cayenne, and garlic powder together in a small bowl.
- Rub 1/2 of the oil over chicken, then half of the spice mixture.
- Cook in the preheated air fryer for 30 minutes. Carefully remove chicken from the fryer.
- Flip chicken over. Oil the other side and sprinkle with remaining spice mixture. Return to the air fryer and continue to cook until no longer pink at the bone and the juices run clear, about 30 minutes more. An instant-read thermometer inserted into the thickest part of the thigh, near the bone, should read 165 degrees F (74 degrees C).
- Remove from the fryer, cover with a doubled sheet of aluminum foil, and allow to rest in a warm area for 10 minutes before slicing.

Ingredients:
- 4 lb whole fryer chicken ((3-4 lb chicken is best - I recommend no more than 4 lbs in the Vortex Plus))
- 2 Tbsp olive oil ((extra virgin))
- 2 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 lemon ((zested and quartered))
- each, salt & pepper ((to taste))

- Prepare your chicken by ensuring that the inner cavity is clean and giblets are removed. Place chicken on a clean cutting board.
- Combine seasoning ingredients (paprika, garlic powder, onion powder, salt, pepper, lemon zest) in a small bowl and set aside.
- Trim the tail from your chicken, if desired, as well as any excess fat. Stuff the lemon quarters into the body cavity, then coat the chicken with olive oil and rub the seasoning into the skin.
- Use kitchen twine to truss the chicken so that the legs and wings do not flap while rotating on the rotisserie function.
- Push the rotisserie spit through the chicken and secure with the rotisserie forks on each end. Line your drip tray with aluminum foil (for easier cleanup).
- Set the air fryer to 380 degrees F (193 degrees C) and select either 'air fry' or 'roast'. *I recommend the air fry option for crispier skin. Set the time for 40 minutes.
- When your air fryer is preheated and indicates to 'add food' load the left side of your rotisserie spit in the vortex plus first, pressing the red lever. Then slide the right side along the metal bar until it drops down into the catch and is securely in place.
- Close the door and cook for 40 minutes. Check the internal temperature of your chicken using a meat thermometer. Cook for an additional 5 minutes at a time, if needed, until the safe internal temperature of 165 degrees F (74 degrees C) is reached.
- Use the Vortex Plus y-rod to remove the chicken, pressing the red lever to release the rotisserie spit. Transfer the cooked chicken to a cutting board or plate and cover loosely with aluminum foil for 5-10 minutes before serving.

Ingredients:
- 1 4.5-5 pound whole chicken
- 1/2 fresh lemon
- 1/4 whole onion
- 4 sprigs of fresh thyme
- 4 sprigs of fresh rosemary
- olive oil spray
- 1 teaspoon ground thyme (I like to use ground thyme in addition to fresh thyme for optimal flavor.)
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- Kosher salt to taste (Be sure to use Kosher salt. The thick crystals from the salt will help to produce crispy skin on the chicken.)
- pepper to taste

- I purchased my whole chicken ready with the contents of the cavity removed. If your chicken still has the giblets inside of it, you will need to remove them prior to cooking.
- Stuff 1/2 of fresh cut lemon and 1/4 of a chopped onion inside the cavity of the chicken along with the fresh rosemary and thyme.
- Make sure the chicken is completely dry on the outside. Pat dry with paper towels if necessary. A dry chicken will help it crisp in the air fryer with the olive oil.
- Spray olive oil onto both sides of the chicken using an oil sprayer.
- Sprinkle the seasonings throughout and onto both sides of the chicken. You may elect to only season the bottom side of the chicken at this step. Because you will need to flip the chicken during the air frying process, you will likely lose some of the seasonings at this stage. My preference is to season both sides initially, and then re-assess if more seasoning (usually salt is needed later).
- Line the air fryer with parchment paper. This makes for easy cleanup. Load the chicken into the air fryer basket with the breast side down.
- Air fry the chicken for 30 minutes on 330 degrees.
- Open the air fryer and flip the chicken. I gripped the chicken cavity with tongs to flip.
- Re-assess if more seasoning is needed on the breasts, legs, and wings. Add additional if necessary.
- Air fry for an additional 20-25 minutes until the chicken reaches an internal temperature of 165 degrees. Use a meat thermometer.
- This step is important. Place the meat thermometer in the thickest part of the chicken, which is typically the chicken thigh area. I like to test the breast too, just to ensure the entire chicken is fully cooked.
- Remove the chicken from the air fryer basket and place it on a plate to rest for at least 15 minutes before cutting into the chicken. This will allow the moisture to redistribute throughout the chicken before you cut into it.
