Ingredients:
  • 750 mL water
  • 100–200 grams granulated sugar (1/2–1 cup, depending on how sweet you want it)
  • 500 grams unsweetened/plain dried fruits (I used apples, pears, cranberries, apricots, prunes)
  • 2 cinnamon sticks
  • 5 star anise
  • 1 pinch ground cloves
  • 1 navel orange (zested)
  • 1 lemon (zested)
  • cooked oatmeal to serve (or vanilla ice cream)
How to cook:
  1. In the Crock-Pot (I used the old version of this Crock-pot), stir together the water and the sugar with a wooden spoon.
  2. Drop in all the dried fruits, the spices, and zests, and stir to combine.
  3. Place the lid on the slow cooker and set it to high.
  4. Let the mixture cook for about 4 hours or until you are ready to serve it (my Crock-Pot switches to a “warm” setting when time is up so you could even set it overnight for a warm breakfast).
  5. Serve the warm compote over cooked oatmeal for breakfast or over vanilla ice cream for dessert.

  • 2 kiwi fruit (peeled and chopped)
  • 2 clementines (peeled and separated)
  • 1 cup pomegranate seeds
  • 2 Tablespoon mint leaves (finely chopped)
  • ¼ cup orange juice
  • 1 Tablespoon honey

Ingredients:
  • 4 firm ripe pears, peeled and quartered
  • 1 vanilla pod, halved and seeds scraped out
  • 4 tbsp clear honey
  • 1 cinnamon stick
  • Finely grated zest and juice of 1 orange
  • 200g (7oz) ready-to-eat apricots
  • 200g (7oz) ready-to-eat prunes
  • 50g (2oz) Craisins (or dried cranberries)
  • 100ml (3½fl oz) elderflower cordial
Nutrition:

How to cook:
  1. Put the pears in a pan large enough to fit them snugly in one layer and cover with 450ml (¾ pint) water. Add the vanilla pod and seeds, honey, cinnamon stick, orange zest and juice.

  3. Add the apricots, prunes, Craisins and elderflower cordial, cover and cool.
  4. Store, covered, in the fridge for up to 1 week.
