Ingredients:
  • 6 oz (170 g) ground pork (lean:fat ratio 7:3)
  • 1 tablespoon Shaoxing wine ((or dry sherry))
  • 2 teaspoons light soy sauce ((or soy sauce))
  • 1 teaspoon ginger (, grated)
  • 1/4 teaspoon salt
  • 1 egg white
  • 2 tablespoons water
  • 2 teaspoons cornstarch
  • 1 1/2 to 2 lbs (700 to 900 g) winter melon
  • 4 cups pork broth ((or low-sodium chicken broth) (*see footnote))
  • 2 slices ginger ((Optional))
  • 1/2 teaspoon salt (, or to taste (use 1/4 teaspoon salt if using store-bought broth))
  • 1/3 cup cilantro (, chopped (For garnish))

How to cook:
  1. For the meatballs
  2. Combine the ground pork, Shaoxing wine, light soy sauce, minced ginger, salt, egg white and water in a medium-sized bowl. Stir with a spatula to mix well. Add the cornstarch. Mix until the ground pork becomes pasty and sticky. Set aside to marinate.
  3. For the soup
  4. To prepare the winter melon. Chop it into 3 to 4 pieces. Use a knife to slice the rind off and discard it. Cut off the soft inner part and discard it. Slice the winter melon into even 1/2” (1 cm), large bite-size pieces.
  5. Add the broth and ginger (if using) to a medium-sized pot and bring to a boil over medium-high heat. Turn to medium-low heat. Use a spoon to scoop about 1 tablespoon of the ground pork mixture, shape it into a ball, and add it to the soup. Make the meatballs one at a time. After the last meatball is added, cook for 1 minute. Stir the soup gently 2 to 3 times. Immediately transfer all the meatballs to a plate and set aside. The meatballs should be cooked on the outside but still raw inside.
  6. Add the winter melon to the pot. Bring the soup to a boil over high heat. Turn to medium heat and boil until the winter melon is almost cooked through, 6 to 8 minutes. The edges of the winter melon should have turned semi-transparent.
  7. Add the meatballs back into the soup. Bring the soup back to a boil and cook for 1 minute. Turn off the heat, cover, and allow the soup to sit for another 5 minutes. The residual heat will further gently cook the meatballs so they remain super tender and juicy. Add the salt and mix well. Taste the soup and adjust seasoning if needed.
  8. Add cilantro to the soup and serve hot.

How to cook:
  1. Bring the water to boil in a deep pot. Add the pork ribs and boil for 5 minutes before adding the winter melon, dried seafood, peppers, and honey date. Continue to boil on medium heat for 15-20 minutes before lowering the heat to low. Discard the "foam" at the top of the soup. Keep boiling the soup on low heat for about 45 minutes or so or until the soup is full of the sweet flavor of all the ingredients. Add salt to taste. If you like, you might add some more water and bring the soup to boil before serving.

  2. Rinse mushrooms. Soak them in some water until softened. Drain and dry well, cut into dices. Reserve the soaking water. Peel winter melon and cut into cubes. Marinate pork with seasoning for 10 to 15 minutes. Prepare some boiling water.
  3. Heat oil in a frypan. Sauté ginger until aromatic. Add mushrooms and stir fry for a while. Toss in diced winter melon. Add chicken stock and the soaking water, with some more boiling water to your preference. Bring to a boil. Add marinated pork and continue to cook for another 10 minutes. Season with salt. Ingredients:
  • 3 lbs winter melon
  • 2 lbs pork (bone-in for flavor)
  • 10 cups water
  • 1 tbsp salt (to taste)
  • 1/4 tsp white pepper
  • 3 slices ginger
  • 2 or 3 whole dried scallops
  • 1 tbsp dried shrimp
  • 2 whole dried jujube
  • 1 tbsp goji berries
  • 1-2 tbsp shaoxing or rice wine
How to cook:
  1. Remove the winter melon rind with a knife or vegetable peeler. Cut into the size and shape you like—cubes, strips, wedges, etc.
  2. Trim any excess fat from the pork ribs and cut into the size that you prefer.
  3. Preheat the Instant Pot on the saute function. Add a little bit of oil and sear the pork pieces. This step is not necessary but adds depdth to the flavor.
  4. Pour in the water and add the ginger and dried seafood if you wish.
  5. Pressure cook on high heat for 20 minutes. Then allow it to naturally release pressure until you can open the lid, about 15 minutes.
  6. Switch to the saute function again. Add the winter melon. If you wish, also add the jujube and goji berries.
  7. Simmer for about 15 minutes or until the winter melon is to your desired texture. It will start to look translucent when cooked.
  8. Add salt and pepper to tast.
