  • 1/2 pound winter melon
  • 4 dried shiitake mushrooms
  • 2 cups chicken broth
  • 2 to 3 slices ginger
  • 1/4 cup diced cooked ham
  • Salt, to taste
  • Pepper, to taste
  • 1 green onion, green part only, washed and cut on the diagonal into 1-inch pieces

How to cook:
  1. Gather the ingredients.
  2. Wash the winter melon. Remove the green skin, seeds, and pulp. Cut into 2-inch pieces.
  3. Place the winter melon in a pot of water, bring to a boil. Reduce heat and simmer for approximately 20 minutes, until the winter melon is tender.
  4. Place dried shiitake mushrooms in a small bowl. Cover with cold water, and set aside for 20 minutes to reconstitute the mushrooms.
  5. Squeeze out any excess water from the mushrooms, set aside.
  6. To the pot, add the mushrooms, chicken broth, ginger, and cooked ham. Add salt and pepper to taste.
  7. Simmer for about 20 minutes. Add green onion for garnish and serve hot.

  • 3-4 red dates
  • 1 teaspoon dried shrimp

How to cook:
  1. Place ribs in clean water, bring to boil and continue cooking for 1-2 minutes. Transfer out and rinse under running water.
  2. Cut the rind of winter melon and then cut into large chunks.
  3. Place red dates, dried shrimp, smashed ginger, ribs and winter melon with enough water in high pressure cooker; cook for 15 minutes after boiling. Or you can use a stew pot or slow cooker; cook until the ribs and winter melon are soft.
  4. Add salt before serving

  • 1 roasted chicken carcass ((trimmed and rinsed))
  • 12 dried red dates ((rinse and soak for 15 minutes))
