  • 1 pound pasta (your choice)
  • 3 cups vegetables like broccoli, bell peppers, and tomatoes (chopped)
  • 1/2 - 1 cup sliced olives (I used Kalamata olives, but black olives are good in this too!)
  • 8 ounces bottled Zesty Italian dressing
  • 1 tablespoon dry Zesty Italian dressing seasoning mix

How to cook:
  1. Boil the pasta according to package directions. Rinse in cold water when cooked.
  2. Add the vegetables to the salad. For extra flavor, marinate the veggies in the dressing for 3-4 hours prior to putting the salad together. This is optional.
  3. Add the olives to the salad and toss together.
  4. Mix in half of the Zesty Italian Dressing. Reserve the other half and the dry seasoning mix for immediately before serving the salad, and then mix in.

  • 1 pint cherry tomatoes (halved)
  • 1 (6 oz) can whole olives (halved)

  • 3 tbsp parsley (chopped)
  • 1 small shallot (minced)

How to cook:
  1. Bring a large stockpot filled 2/3 of the way with water to a boil. Add pasta and cook according to the package's directions. Once cooked, drain and rinse with cold water.
  2. Refrigerate while preparing the remaining ingredients.

  • 16 ounces dry tri-colored rotini pasta
  • 1 (15-ounce) can garbanzo beans, drained + rinsed
  • 1 cup cherry tomatoes, cut in half
  • 1 cup sliced black olives
  • 1 cup diced green bell peppers
  • ½ cup sliced red onions
  • ½ cup Pepperoncini peppers, thinly sliced
  • 8-ounces pearl mozzarella (or small mozzarella cheese balls cut in half)
  • ¼ cup EACH: grated parmesan cheese AND chopped parsley
  • 1 batch prepared Italian dressing
How to cook:
  1. PREP: Boil the pasta until al dente according to package directions in a large pot of extra salty water. Rinse the pasta under cold running water until cooled. Drain well.
  2. SALAD: In a large bowl, toss together all the ingredients for the salad. Drizzle with the Italian dressing and toss until all the ingredients are coated. Taste and adjust with salt as needed. Allow the pasta salad to refrigerate for at least 2 hours or until ready to serve.

Ingredients:
  • 1 package garden rotini pasta (12-16oz)
  • 1 c. Colby Jack cheese (cubed)
  • 1 c. cucumber (diced or chopped)
  • 1 can black olives (sliced)
  • 1 c. tomato (diced)
  • 1/2 bag mini pepperoni
  • 1 bottle Italian salad dressing
  • 1/2 - 1 c. parmesan cheese (grated)
How to cook:
  1. Cook pasta according to package direction; drain, rinse, and pour in a large bowl.
  2. Place cheese cubes, cucumber, olives, tomato, and pepperoni directly over pasta; stir carefully to combine.
  3. Pour half the bottle of dressing into the bowl; mix well with other ingredients. Cover and place in the fridge for at least two hours before serving.
  4. Add more Italian dressing before serving. Top with parmesan cheese, stir, and serve.
